A delightfully creamy and healthy mixture of fresh strawberries, ripe bananas, protein-rich Greek yogurt, and a touch of milk (or creamer). This vibrant recipe creates the perfect frozen treat for a hot day, offering a guilt-free indulgence that’s both refreshing and satisfying.

Ingredients:

2 ripe bananas, peeled

10 fresh strawberries, hulled and divided

1/2 cup 2% Greek yogurt (plain or vanilla for extra flavor)

2 tablespoons Coffee-mate Classic Vanilla creamer (or substitute with milk)

1/2 teaspoon pure vanilla extract

1/4 cup fresh blueberries

6 vanilla wafers

Directions:

1. Prepare the wafer crumbs: Place the vanilla wafers into the bowl of a food processor. Pulse until they resemble fine crumbs. Evenly spoon these wafer crumbs into the bottom of each popsicle mold (about 1 teaspoon per mold). Set the molds aside.

2. Prepare the fruit chunks: Roughly chop 4 of the 10 strawberries into small, bite-sized chunks. Set these aside for layering.

3. Make the smoothie base: Add the peeled bananas, the remaining six strawberries (whole), Greek yogurt, Coffee-mate Classic Vanilla creamer (or milk alternative), and vanilla extract into the bowl of your blender. Blend on high speed until the mixture is completely smooth and creamy. Ensure there are no lumps.

4. Layer the popsicles:

    a. Pour a layer of the prepared smoothie mixture into each popsicle mold, filling it about one-third of the way.

    b. Carefully drop 4-5 fresh blueberries into each mold on top of the first smoothie layer.

    c. Add an additional layer of the smoothie mixture, filling the molds to about two-thirds full.

    d. Distribute the chopped strawberry chunks (4-5 pieces per mold) over this second smoothie layer.

    e. Top off each mold with the remaining smoothie mixture, filling them almost to the brim.

5. Freeze: Insert popsicle sticks into the center of each mold. Place the filled molds in the freezer for 4-5 hours, or until the popsicles are completely solid and firm.

6. Serve: To easily remove the popsicles, run the molds under warm water for a few seconds. Enjoy immediately!

Substitution Tip: If you don’t have Coffee-mate creamer on hand, you can substitute it with 2 tablespoons of milk of your choice (dairy or non-dairy) for a slightly less creamy, but still delicious, result. You might also add a touch more vanilla extract if using plain milk.

Variations: Feel free to experiment with other fruits like raspberries or mango. For an extra healthy kick, consider adding a handful of spinach (it won’t affect the flavor much, but adds nutrients!).
