Ingredients:

  • 1 pound campari tomatoes

Directions:

  2. Place the campari tomatoes evenly on the prepared baking sheet. Drizzle them with the extra-virgin olive oil, then sprinkle generously with kosher salt and freshly ground black pepper. Bake for 40 minutes, or until the tomatoes are visibly wilted, their skins are beautifully wrinkled, and some of their juices have caramelized on the pan. Allow the roasted tomatoes to cool slightly on the baking sheet.
  3. While the tomatoes are cooling, heat a large skillet or griddle over medium-low heat.
  4. To assemble the sandwiches: Take each half of the ciabatta bread and smear 1/2 tablespoon of pesto evenly on the cut side. On one half of each ciabatta roll, arrange a few slices of fresh mozzarella. Top the mozzarella with a generous portion of the cooled roasted tomatoes and a handful of fresh baby spinach. Place the other half of the ciabatta roll (pesto-side down onto the fillings) on top.
