Ingredients

  • 2 cups old-fashioned oats, certified gluten-free optional
  • 1 cup coarse almond meal
  • ½ cup shredded coconut, unsweetened
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • ¼ cup coconut oil, melted
  • ¼ cup, plus 2 tablespoons honey, divided
  • 2 teaspoons vanilla extract
  • ½ cup almond butter
  • Strawberry jam, or your favorite jam

Instructions

  1. Preheat oven to 325 degrees F (160°C). Lightly spray 2 nonstick mini muffin tins with coconut oil or another non-stick spray.
  2. In a large mixing bowl, combine the old-fashioned oats, coarse almond meal, unsweetened shredded coconut, ground cinnamon, and kosher salt. Stir well to ensure all dry ingredients are evenly distributed.
  3. In a separate small bowl, whisk together the melted coconut oil, ¼ cup of honey, and vanilla extract until fully combined. Pour this wet mixture over the dry oat mixture. Fold gently with a spatula or spoon until all the oat mixture is thoroughly and evenly coated.
  4. Spoon approximately 1 tablespoon of the oat mixture into each mini muffin cup. Using the back of the tablespoon, firmly press the mixture down to create a shallow depression or “cup” in the center of each, forming the base of your granola cups.
  5. Bake for 15-18 minutes, or until the edges of the cups turn a beautiful golden brown. Remove the muffin tins from the oven and allow the granola cups to cool in the tins for at least 10 minutes. This is crucial for them to firm up. Once slightly cooled, gently run a butter knife around the edges of each cup to release them from the mold. Transfer them to a wire rack to cool completely before filling.
  6. While the cups are cooling, prepare your filling. In a small bowl, mix the ½ cup of almond butter with the remaining 2 tablespoons of honey until smooth and well combined.
  7. Once the granola cups are completely cool, fill each cup with a scant teaspoon (a slightly less than full teaspoon) of the honey almond butter mixture. Top each filled cup with a small dollop of your chosen jam.
