Herb & Cheese Potato Souffles

Light, fluffy potato soufflés made with fresh herbs and Swiss cheese, perfect for elevating any holiday meal or special occasion.

Cook Time: 45 minutes

Ingredients:

  • 1 and 1/4 pounds Idaho® Potatoes, peeled
  • 2 tablespoons unsalted butter, plus more for brushing
  • 1 heaping cup grated Swiss cheese
  • 1/3 cup half and half
  • 1 and 1/2 teaspoons chopped thyme
  • 1 and 1/2 teaspoons chopped rosemary
  • 3 large eggs, separated and at room-temperature
  • Scant 1/8 teaspoon cream of tartar
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 375 degrees F. Generously brush the inside of 2 (5-inch) soufflé dishes with butter, ensuring full coverage to aid in rising.
  2. Cut the peeled potatoes into uniform 1-inch chunks. Place the potatoes in a large pot and cover completely with cold water. Bring the water to a boil over medium-high heat and continue to cook until the potatoes are fork-tender, typically about 10 minutes.
  3. Drain the cooked potatoes very thoroughly. Position a food mill, fitted with a coarse die, over a large mixing bowl. Pass all the potatoes through the mill, then scrape the bottom of the mill to ensure all potato is collected.
  4. Into the milled potatoes, stir in the 2 tablespoons of unsalted butter until melted, followed by the heaping cup of grated Swiss cheese, the 1/3 cup of half and half, and the chopped thyme and rosemary. Season generously with salt and pepper to taste. Finally, mix in the three egg yolks until fully incorporated.
  5. In a separate large, clean bowl, add the three room-temperature egg whites. Whisk using an electric mixer until the whites become foamy. Add a pinch (scant 1/8 teaspoon) of cream of tartar to the bowl. Continue to whisk the egg whites until stiff, glossy peaks form.
  6. Add a generous scoop (about one-quarter) of the whipped egg whites to the potato mixture; gently stir to lighten the potato base. Then, carefully fold in the remaining egg whites in two additions until no streaks of white remain, being careful not to deflate the mixture.
  7. Divide the prepared potato mixture evenly between the two buttered soufflé dishes, filling each approximately 3/4 of the way full.
  8. Bake for 40-45 minutes, or until the soufflés are beautifully puffed, boast a rich golden-brown color, and are set. Serve immediately to enjoy their optimal texture and warmth.
  1. If a food mill or potato ricer is unavailable, you can use a stand mixer with a paddle attachment or a handheld mixer to whip the potatoes until smooth. A traditional potato masher can also be used, but ensure the potatoes are mashed very well to eliminate any lumps.
  2. It is completely normal for soufflés to deflate slightly a few minutes after being removed from the oven. This natural occurrence does not diminish their delicious flavor or fluffy texture.
