Happy Sunday and welcome to a celebration of garden-fresh delights! There’s an undeniable joy that comes with the arrival of summer, bringing with it an abundance of vibrant produce and the inspiration to create light, refreshing meals. This week’s #SundaySupper theme, “garden recipes,” resonated deeply with me. As someone who cherishes the experience of cultivating fresh herbs and vegetables, I understand the transformative power that quality, seasonal ingredients can bring to any dish. They don’t just add flavor; they infuse life and brightness, turning ordinary meals into extraordinary culinary experiences.
For this week’s special feature, I am thrilled to present a recipe that perfectly embodies the spirit of summer: our irresistible Red Potato & Grilled Corn Salad with a Chipotle Lime Vinaigrette. This isn’t just any salad; it’s a symphony of textures and flavors, thoughtfully crafted to be the ultimate companion for all your warm-weather festivities. Imagine serving this at your next backyard barbecue, a leisurely picnic in the park, or an elegant deck party – its vibrant appearance and delicious taste are guaranteed to be a hit. What makes this salad truly stand out, beyond its incredible flavor, is its health-conscious profile. Breaking away from traditional, heavy potato salads, this version proudly boasts a luscious, creamy texture without a single drop of mayonnaise, making it a lighter, fresher, and equally satisfying option.
At the heart of this sensational salad is a collection of the freshest ingredients, many of which can be plucked straight from your garden or sourced from a local farmer’s market. We’re talking about earthy red potatoes, providing a hearty base; crisp, peppery radishes that add a delightful bite; sweet corn, grilled to perfection for a smoky depth; pungent scallions; and a generous scattering of fresh cilantro, tying all the flavors together with its bright, herbaceous notes. Each component plays a crucial role, contributing to a harmonious blend that tantalizes the taste buds and invigorates the senses.
The true magic of this salad, however, lies in its extraordinary dressing: a chipotle lime vinaigrette that is nothing short of amazing. This isn’t your average dressing; it’s a carefully balanced concoction where bold flavors meet in a delightful dance. We harness the smoky heat of spicy chipotles, the bright, invigorating tartness of fresh limes, and the delicate sweetness of honey. This triumvirate of sweet, tart, and spicy creates a flavor profile that I personally find irresistible. It coats every ingredient, infusing the salad with a complex, nuanced taste that elevates it from a simple side dish to a star attraction. The vinaigrette not only binds the ingredients but also provides an exhilarating kick that makes each mouthful an adventure.
Why This Salad is Your Summer Go-To: Effortless and Flavorful
Beyond its incredible taste, one of the most appealing aspects of this Red Potato & Grilled Corn Salad is its remarkable ease of preparation. In today’s fast-paced world, finding recipes that deliver maximum flavor with minimal effort is a true culinary win, and this salad certainly fits the bill. It’s the kind of dish you can whip up without stress, even when time is tight. Imagine this scenario: a last-minute invitation to a gathering, and you need a show-stopping dish that doesn’t demand hours in the kitchen. Fear not, because this recipe comes to your rescue! With just about 15 minutes of active prep time, followed by a quick cook, you can have this vibrant, flavor-packed salad ready to impress. Its simplicity makes it a perfect choice for both novice cooks and seasoned chefs looking for a delicious, no-fuss option.
The Perfect Marriage of Earthy Potatoes and Smoky Sweet Corn
Let’s talk about the stars of the show: red potatoes and grilled corn. Red potatoes are an excellent choice for salads because their waxy texture holds its shape beautifully even after cooking, preventing the mushiness often associated with other potato varieties. We scrub them clean, chunk them into bite-sized pieces, and cook them just until tender, ensuring they retain a slight firmness that’s ideal for a hearty salad. The skin also adds a lovely pop of color and an extra layer of nutrients, making this potato salad a healthier and more visually appealing option than traditional versions.
Then there’s the corn – oh, the grilled corn! Grilling fresh sweet corn elevates its natural sweetness and introduces an irresistible smoky char that cannot be replicated by boiling or steaming. The kernels become slightly caramelized and burst with flavor, adding a textural contrast and a depth of taste that truly sets this salad apart. Whether you use a gas grill, charcoal grill, or even an indoor grill pan, don’t skip this crucial step; it’s what transforms good corn into extraordinary corn, creating a perfect balance with the tender potatoes.
A Medley of Freshness: Radishes, Scallions, and Cilantro
While the potatoes and corn form the backbone, the supporting cast of fresh vegetables and herbs brings this salad to life. Thinly sliced radishes contribute a wonderful peppery crunch, cutting through the richness and adding a refreshing bite. Their vibrant color also adds to the visual appeal of the dish. Scallions (also known as green onions) offer a milder, sweeter onion flavor than their more pungent counterparts, providing an aromatic backbone without overpowering the other ingredients. And fresh cilantro, with its distinctive citrusy, almost peppery notes, ties everything together, infusing the salad with a burst of vibrant, herbaceous freshness that is simply indispensable. These fresh elements aren’t just for flavor; they contribute to the salad’s stunning visual appeal, making it a feast for the eyes as well as the palate, ensuring every forkful is a delight.
Crafting the Unforgettable Chipotle Lime Vinaigrette
The vinaigrette is arguably the secret weapon in this recipe. It’s a bold, bright, and utterly delicious concoction that effortlessly coats every ingredient, infusing the salad with an unforgettable zing. The combination of spicy chipotles in adobo, tart fresh lime juice, and sweet honey creates a dynamic flavor profile that hits all the right notes. Chipotle peppers, smoked and dried jalapeños, are preserved in a rich, tangy adobo sauce, lending a complex smoky heat that is robust without being overwhelmingly spicy. This unique heat adds depth without simply burning your palate. Fresh lime juice provides that essential bright, zesty counterpoint, cutting through the richness and awakening the palate with its vibrant acidity. And a touch of honey balances the heat and tartness, adding a subtle, natural sweetness that makes the vinaigrette incredibly well-rounded and addictive. Whisked with light olive oil, a minced garlic clove, and a pinch of cayenne for an extra kick, this dressing is a game-changer – not just for this potato and corn salad, but for any green salad or grilled vegetable dish you might imagine. Its versatility and robust flavor profile make it a must-have in your recipe arsenal.
Health Benefits and Versatility: A Smart Summer Choice
This Red Potato & Grilled Corn Salad isn’t just delicious; it’s also a powerhouse of nutrition, making it a smart choice for anyone seeking healthy recipes. Red potatoes are an excellent source of potassium and Vitamin C, crucial for nerve and muscle function, and immune health. Corn provides dietary fiber, essential for digestive health, and valuable antioxidants that protect your cells. Radishes are rich in Vitamin C and fiber, while cilantro adds a host of vitamins and minerals, including Vitamin K. By opting for a lighter, oil-based vinaigrette instead of heavy, mayonnaise-laden dressings, we significantly reduce unhealthy fats and calories, resulting in a dish that’s both satisfying and good for you. This salad is naturally gluten-free and can easily be adapted for vegan diets by substituting maple syrup for honey (or omitting it entirely). Its versatility knows no bounds – serve it as a main course for a light lunch, a vibrant side dish for grilled chicken or fish, or as a potluck contribution that will surely stand out. It’s also excellent for meal prepping; simply store the vinaigrette separately and dress just before serving to maintain optimal freshness and texture, making it perfect for busy weeknights or packed lunches.
Tips for Success & Customization: Make It Your Own
To ensure your Red Potato & Grilled Corn Salad turns out perfect every time, here are a few simple tips. When boiling the potatoes, make sure to add salt to the water; this seasons the potatoes from the inside out, enhancing their flavor and overall taste. Don’t overcook them; they should be tender but still firm, maintaining their structural integrity for the salad. For the corn, aim for a nice char on all sides – this is where the grilled flavor really develops and adds that irresistible smoky depth. When making the vinaigrette, whisk slowly to emulsify the olive oil, creating a smooth and cohesive dressing that clings beautifully to the ingredients. And always taste and adjust the seasoning – a little more salt, pepper, or lime juice can make all the difference, tailoring it perfectly to your palate.
Feel free to customize this salad to your liking. Add some diced avocado for extra creaminess and healthy fats, or a handful of black beans for added protein and fiber, turning it into a more substantial meal. Cherry tomatoes, thinly sliced bell peppers, or even a sprinkle of crumbled cotija cheese would also make excellent additions. For a spicier kick, increase the amount of chipotle or cayenne, or for a milder version, reduce them. This recipe is a fantastic foundation, inviting you to experiment and make it truly your own, transforming it to suit any occasion or dietary preference.
Enjoy this delightful and easy-to-make salad!

Red Potato & Grilled Corn Salad
Yield: 4 servings
Total Time: 30 minutes
Prep Time: 15 minutes
Cook Time: 15 minutes
Ingredients:
- 1 lb. red potatoes, scrubbed and chunked into 1-inch cubes
- 3 ears fresh corn, husked
- 6 radishes, thinly sliced
- 2 scallions, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons fresh lime juice
- 2 tablespoons chipotle in adobo
- 1 garlic clove, minced
- 1/2 cup light olive oil
- 4 teaspoons honey
- Pinch of cayenne
- Salt and pepper
Directions:
- In a medium saucepan cover potatoes with water. Bring to a boil over high heat. When the water begins to boil, add some salt to flavor the potatoes, about 1/4 cup. Reduce heat to medium and cook potatoes until tender when pierced with a knife or fork, about 15 minutes. When the potatoes are tender, drain and rinse with cold water. Add potatoes to a large bowl.
- While the potatoes are cooking, preheat a gas or charcoal grill (feel free to use an indoor grill). Drizzle corn with olive oil and salt and pepper. Cook the corn directly over the heat until the kernels are brown all over, turning often, about 8 minutes. Remove from grill and set aside. When the corn is cool enough to handle, cut kernels off the cob. Add corn, scallions, radishes, and cilantro to the bowl with the cooked potatoes.
- In a small bowl, whisk together lime juice, chipotle in adobo, garlic, honey, and cayenne. Slowly whisk in olive oil. Add salt and pepper to taste. Pour vinaigrette over potato mixture. Toss to combine. Add more salt and pepper to taste.
