Directions:

  1. Begin by cooking the bacon: In a large, heavy-bottomed sauté pan or skillet, cook the 1-inch pieces of bacon over medium-high heat. Stir occasionally until the bacon is beautifully crispy and rendered, typically about 7-10 minutes. Using a slotted spoon, carefully transfer the cooked bacon to a plate lined with paper towels to drain any excess grease; set aside. Reserve precisely 2 tablespoons of the rendered bacon grease in the pan, discarding any remaining grease. This flavorful grease will be key for cooking the sweet potatoes.
  2. Prepare the sweet potatoes: Reduce the heat to medium. Add the cubed sweet potatoes to the pan with the reserved bacon grease. Cook the sweet potatoes, stirring only occasionally, for 10 minutes.
