Ingredients:

  • 1/2 cup (113g) unsalted butter, melted and cooled slightly
  • 1 cup (200g) granulated sugar
  • 2 large eggs, at room temperature
  • 1/2 cup (120g) full-fat sour cream, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon almond extract (optional, but highly recommended for depth of flavor)
  • 1 and 1/2 cups (180g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 cup (approximately 14-16) fresh pitted cherries, finely chopped
  • 1/2 cup (90g) mini chocolate chips

For the Fluffy Vanilla Bean Buttercream:

  • 1 and 1/2 sticks (170g) unsalted butter, softened to room temperature
  • 2 and 1/2 cups (300g) powdered sugar, sifted to prevent lumps
  • 1 teaspoon vanilla bean paste (or 2 teaspoons pure vanilla extract)
  • 2 tablespoons heavy cream (or milk, as needed)

Directions:

Prepare the Cupcakes:

  1. Preheat your oven to 350 degrees F (175 degrees C). Line a 12-cup standard muffin tin with cupcake liners. Set aside.
  2. In a large mixing bowl, combine the melted butter and granulated sugar. Whisk them together vigorously until the mixture is well combined and slightly lightened in color.
  3. Add the eggs to the butter-sugar mixture one at a time, whisking well after each addition until just incorporated. Be careful not to overmix.
  4. Next, whisk in the sour cream, vanilla extract, and almond extract (if using) until the wet ingredients are smooth and fully blended.

  8. Using a 1/4-cup cookie scoop or a spoon, fill each lined muffin tin 2/3 full with batter. This helps ensure even baking and prevents overflow.
  9. Bake for 20-22 minutes, or until a wooden toothpick inserted into the center of a cupcake comes out mostly clean, with perhaps a few moist crumbs attached. Avoid overbaking, as this can lead to dry cupcakes.
  10. Allow the cupcakes to cool in the muffin tin for about 5 minutes before carefully transferring them to a wire rack to cool completely. They must be completely cool before frosting.

Prepare the Vanilla Bean Buttercream:  

  1. In the bowl of a stand mixer fitted with the paddle attachment (or using a hand mixer), cream the softened unsalted butter on medium speed until it is light, pale, and fluffy, which usually takes about 2 minutes.
  2. Reduce the mixer speed to low. Gradually add the sifted powdered sugar to the bowl, one cup at a time, mixing until incorporated. Stop the mixer frequently to scrape down the sides and bottom of the bowl with a rubber spatula to ensure everything is evenly mixed.
  3. Once all the powdered sugar has been added, increase the mixer speed to medium and beat for an additional 2 minutes to ensure the buttercream is light and smooth.
  4. Scrape down the sides of the bowl again. Add the vanilla bean paste (or vanilla extract) to the buttercream. Give the mixture a few good turns on low speed to incorporate.
  5. With the mixer on low, slowly drizzle in the heavy cream, one tablespoon at a time, until the desired consistency is reached. You might not need all of it, or you might need a tiny bit more, depending on your butter’s consistency.
  6. Once the heavy cream is incorporated, turn the speed up to medium and whip for a final 1 minute. This will make the buttercream extra fluffy and smooth. Scrape down the sides of the bowl one last time and give it a quick final whip.
  7. Transfer the prepared buttercream to a piping bag fitted with a round #14 tip (or any decorative tip you prefer). If you don’t have a piping bag, simply use a cake spatula or butter knife to generously spread the buttercream onto each cooled cupcake.
