Cake Batter Funfetti Cookie Cups with Dark Chocolate Nutella Ganache

Ingredients:

Cookies

2 cups all-purpose flour
1 tablespoon cornstarch
1 teaspoon baking soda
1/2 teaspoon kosher salt
1 and 1/2 sticks unsalted butter (12 tablespoons), softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 large egg, at room-temperature
2 teaspoons pure vanilla extract
1/2 teaspoon almond extract
1/3 cup rainbow jimmies (sprinkles)
1/4 cup rainbow nonpareils (small round sprinkles)

Nutella Ganache

1/2 cup dark chocolate chips (good quality recommended)
1/4 cup Nutella (hazelnut spread)
1/3 cup heavy cream (or whipping cream)

Directions:

For the Cookies

1. In a medium bowl, whisk together the all-purpose flour, cornstarch, baking soda, and kosher salt. Set aside.

2. In the bowl of a stand mixer fitted with the paddle attachment (or using a handheld electric mixer), cream together the softened unsalted butter, granulated sugar, and light brown sugar on medium speed until the mixture is light in color and fluffy, about 1-2 minutes.

3. Scrape down the sides of the bowl with a spatula. Add the room-temperature egg, pure vanilla extract, and almond extract. Mix on low speed until just combined, scraping down the sides of the bowl once more to ensure everything is incorporated.

4. Gradually add the dry flour mixture to the wet ingredients. Mix on low speed until the batter is smooth and the flour is thoroughly combined, being careful not to overmix. Overmixing can lead to tough cookies.

5. Gently fold in the rainbow jimmies and nonpareils until evenly distributed throughout the dough. Avoid excessive mixing to prevent the colors from bleeding.

6. Cover the cookie dough with plastic wrap and chill in the refrigerator for at least 4 hours, or preferably overnight. Chilling helps prevent the cookies from spreading too much during baking and deepens the flavors.

7. When ready to bake, preheat your oven to 350°F (175°C). Lightly spray a standard 12-cup muffin tin with nonstick baking spray.

8. Take about 2 tablespoons of the chilled dough and press it firmly into the bottom and slightly up the sides of each cup in the muffin tin. This will form your cookie “cups.”

9. Bake for 13-14 minutes, or until the edges are lightly golden brown and the centers are set. The cookies may still look soft in the middle, but they will firm up as they cool.

10. Cool the cookie cups in the muffin tin on a wire rack for about 5-10 minutes. Then, gently run a thin knife around the edges of each cookie to loosen them. Carefully pop each cookie out of the cup and transfer them to the wire rack to cool completely. Cooling completely is crucial before adding the ganache.

For the Nutella Ganache

1. Place the dark chocolate chips and Nutella in a medium, heat-proof bowl.

2. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer around the edges (do not bring to a rolling boil).

3. Pour the hot cream over the chocolate chips and Nutella in the bowl. Let the mixture sit undisturbed for 1 minute to allow the chocolate to melt.

4. After 1 minute, gently stir the mixture with a whisk or spatula until it becomes completely smooth, glossy, and well combined. If there are any stubborn lumps, you can gently microwave for 10-15 seconds and stir again.

5. Allow the ganache mixture to cool slightly at room temperature, stirring occasionally, until it thickens to a spoonable consistency (about 15-20 minutes). It should be thick enough to hold its shape but still easy to dollop.

Assembly

Once the cookie cups are completely cooled, add a generous dollop of the Nutella ganache to the center of each cookie cup. You can use a small spoon or a piping bag for a neater finish. Serve immediately or store in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week (bring to room temperature before serving for best texture).
