  • 1 pint grape tomatoes, halved
  • 1 (15.5-ounce) can cannellini beans, rinsed and thoroughly drained
  • 1 recipe prepared lemon tahini dressing (as above)

Directions:

Grilled Veggies:

  1. Preheat your grill to medium heat. If using a grill skillet or basket, place the prepared, chopped vegetables into it. Set the skillet or basket on a sturdy work surface (like a clean countertop or cutting board) and drizzle generously with olive oil.
  2. Season the vegetables with black pepper and za’atar. Toss or shake the basket vigorously to ensure all the vegetables are evenly coated with oil and seasoning.
  3. Carefully place the grill basket or skillet on the preheated grill. Allow the vegetables to cook until they become tender-crisp and show signs of charring, which should take approximately 8-10 minutes. Stir the vegetables every few minutes to ensure even cooking and prevent any pieces from burning.
  4. Just before removing the vegetables from the grill, season them with a generous pinch of kosher salt to enhance their flavor. Transfer the cooked veggies to a bowl and allow them to cool to room temperature. Adjust seasoning with additional salt and pepper to taste if needed.
