Veggie Loaded Fried Quinoa

  • 4 tablespoons canola oil, divided

  • 2 tablespoons fresh ginger, minced
  • 1 cup snow peas
  • 3/4 cup frozen peas
  • 4 tablespoons low-sodium soy sauce
  • 1 egg, slightly beaten
  • Salt & pepper
  • Sriracha (optional)

Directions:
