1/2 teaspoon red pepper flakes

3 large russet potatoes, peeled and diced into 1/4-inch cubes

6 cups chicken stock

1 teaspoon kosher salt (more to taste)

1/2 teaspoon Italian seasoning

1 1/2 cups 2% milk

4 tablespoons all-purpose flour

1/2 cup heavy cream

1 teaspoon seasoned salt

1/2 teaspoon black pepper

2 cups shredded cheese (such as Kraft)

1/4 cup sour cream
