For an elevated experience, we highly recommend pairing these decadent lemon coconut cookies with a refreshing beverage. While one cookie is never enough, grabbing two (or more!) might just be the perfect indulgence. Consider a vibrant Grapefruit Honey Mojito, a pitcher of a light and bubbly Fruity Pineapple Sangria (a beloved favorite for many moms), or the crisp, botanical notes of a Blackberry Lime Gin Fizz. The bright flavors of these drinks beautifully complement the citrusy sweetness of the cookies, creating a truly delightful sensory experience.

Crafting the Perfect Lemon Coconut Cookie: Tips and Tricks

This versatile recipe yields approximately 7 generously-sized jumbo cookies or 14 standard-sized treats. For those who adore the rich, chewy texture and wonderfully gooey center that only a larger cookie can deliver, investing in a jumbo cookie scoop is highly recommended. This kitchen essential isn’t just for cookies; it’s a multi-tasking marvel that excels as an ice cream scoop, a cupcake batter dispenser, or even for portioning meatballs. Its robust design ensures you’ll get excellent value and consistent results with every use.

Unlocking the Vibrant Flavor of Lemon

To ensure these cookies are bursting with bright, authentic citrus flavor, we’ve loaded the batter with a generous 2 teaspoons of fresh lemon zest (typically from about two medium lemons) and a ¼ teaspoon of pure lemon extract. The zest provides a fragrant, aromatic depth, while the extract intensifies the lemony punch, creating cookies that are vibrant, tangy, and incredibly refreshing. The natural acidity of the lemon also helps to balance the sweetness, preventing the cookies from being overly cloying. For best results, always zest your lemons before juicing them, ensuring you capture all the precious oils from the peel.

The Secret to Incredible Texture: Cream Cheese and Thoughtful Add-ins

Beyond the lemon, the texture of these soft-baked cookies is truly what sets them apart. Instead of relying solely on butter, we incorporate a harmonious blend of unsalted butter and softened cream cheese into our cookie base. If you’ve never experimented with adding cream cheese to your cookie dough, prepare to be amazed. This simple substitution works wonders, resulting in cookies that are exceptionally soft, moist, and delightfully gooey on the inside, while still developing a subtly crisp, golden-brown exterior. The cream cheese also adds a delicate tang and an extra layer of richness that’s utterly irresistible.

To further enhance the texture and flavor, we’ve introduced a delightful array of mix-ins. A handful of toasted almonds are folded into the batter, providing a satisfying crunch and a nutty undertone that complements the lemon and coconut beautifully. Each cookie is then generously topped with 2 teaspoons of shredded coconut before baking. As the cookies bake, the coconut toasts to a beautiful golden hue, intensifying its tropical flavor and adding another layer of delightful texture. The contrast between the soft, yielding interior and the crunchy, toasted coconut topping is pure bliss.

Enjoying Your Cookies: Freshly Baked or Reheated Bliss

There’s a special kind of magic in enjoying a cookie straight out of the oven – piping hot, fragrant, and at the peak of its gooey perfection. We call it SOOTO (Straight Out Of The Oven) bliss! While it’s tempting to devour the entire batch in one sitting (and we wouldn’t blame you!), these soft-baked lemon coconut cookies store beautifully. Simply place them in an airtight container at room temperature for up to three days. And for those moments when you crave that “just baked” warmth, a quick 10-15 second reheat in the microwave will bring them back to their initial ooey-gooey glory. It’s the perfect way to get another cookie fix whenever the craving strikes.

Soft-Baked Lemon Coconut Cookies

Lemon cookies that have been soft baked to ooey, gooey cookie perfection. They’re extra rich with the addition of cream cheese and white chocolate chips.

Yield: 7 large cookies

Total Time: 27 minutes

Prep Time: 10 minutes

Cook Time: 17 minutes

Ingredients:

  • 3 tablespoons unsalted butter, at room-temperature
  • 3 tablespoons cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon lemon extract
  • 2 teaspoons lemon zest (about 2 lemons)
  • 1 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup white chocolate chips
  • 1/3 cup toasted almonds, chopped
  • 1/3 cup shredded coconut

Directions:

  1. Preheat the oven to 350 degrees F (175°C). Line a baking sheet with parchment paper or a silicone mat for easy cleanup and even baking.
  2. In the bowl of a stand mixer fitted with the paddle attachment, or using a hand mixer, cream together the unsalted butter, softened cream cheese, brown sugar, and granulated sugar until the mixture is light, fluffy, and well combined, which usually takes about 1 minute. Scrape down the sides of the bowl as needed to ensure everything is incorporated.
  3. Add the large egg, fresh lemon zest, vanilla extract, and lemon extract to the creamed mixture. Mix on medium speed until just combined. Use a rubber spatula to scrape down the sides of the bowl once more, then give the mixture another quick mix to ensure uniformity.
  4. In a separate small bowl, whisk together the all-purpose flour, baking soda, and kosher salt until thoroughly combined. This step helps to distribute the leavening agents evenly throughout the dough.
  5. With the mixer on low speed, slowly add the dry ingredients to the wet ingredients, mixing until just combined and no streaks of flour remain. Be careful not to overmix, as this can lead to tough cookies.
  6. Gently fold in the white chocolate chips and chopped toasted almonds using a spatula. Mix until they are evenly distributed throughout the dough.
  7. Measure out 3-tablespoon portions of dough (or use a large cookie scoop for perfectly uniform jumbo cookies) and roll them into smooth balls. The dough will be slightly sticky, which is normal. Place the dough balls on the prepared baking sheet, ensuring they are spaced about 3 inches apart to allow for spreading.
  8. Sprinkle 2 teaspoons of shredded coconut onto the top of each dough ball. Gently press down on the coconut slightly to help it adhere to the dough and ensure it toasts beautifully during baking.
  9. Bake for 16-17 minutes, or until the edges of the cookies are a light golden brown and the centers are still slightly soft. Avoid overbaking if you want to maintain that signature soft and gooey texture.
  10. Allow the cookies to cool on the baking sheet for 5 minutes. This crucial step helps them set and prevents them from breaking when transferred. After 5 minutes, carefully transfer the cookies to a wire rack to cool completely.
  11. Store the cooled cookies in an airtight container at room temperature for up to 3 days to maintain their freshness and soft texture.
