Ingredients
- Brine:
- 1 cup distilled white vinegar
- 1 cup water
- 1/4 cup + 1 tablespoon granulated sugar
- 2 tablespoons kosher salt
- 1 teaspoon red pepper flakes (or more, to taste)
- 1 jalapeño pepper, thinly sliced (seeds removed for less heat, if desired)
- 1 Serrano chile, thinly sliced (seeds removed for less heat, if desired)
- Veggies:
- 1/2 cup diced red bell pepper
- 2 stalks celery, cut into 1/4-inch slices
- 4 radishes, thinly sliced
- 2 carrots, peeled and thinly sliced
- 1 1/2 cups cauliflower florets, cut into small, bite-sized pieces
Instructions
- In a medium saucepan, combine the distilled vinegar, water, sugar, kosher salt, and red pepper flakes. Bring the mixture to a rolling boil over medium-high heat, stirring occasionally to dissolve the sugar and salt. Once boiling, remove the saucepan from the heat and immediately add the thinly sliced jalapeño and Serrano chiles. Allow the brine to cool slightly for about 15 minutes.
- While the brine is cooling, prepare all of your vegetables. Dice the red pepper, slice the celery and radishes, peel and slice the carrots, and cut the cauliflower into small florets. Place all the chopped vegetables into a large bowl and toss gently to combine them evenly. Fill a clean 1.5-liter glass clip-top jar or a large Mason jar approximately halfway with the mixed vegetable blend. Carefully pour about half of the warm brine over these vegetables. Add the remaining mixed vegetables to the jar, then top them off with the remaining brine, ensuring all vegetables are submerged.
- Seal the jar tightly and place it in the refrigerator. For the best flavor development, allow the giardiniera to pickle for at least 48 hours before serving.
