Sausage and Mushroom Ragu
A comforting and flavorful penne pasta dish, generously coated with a hearty sausage and mushroom ragu. This recipe is packed with bold flavors and made from fresh, high-quality ingredients, perfect for a satisfying family meal or entertaining guests.

Ingredients:
1 pound penne pasta, cooked al dente and drained
2 tablespoons extra virgin olive oil, divided
1 pound spicy bulk Italian sausage (casings removed, if applicable)
8 ounces baby portobello mushrooms, thinly sliced
1 large yellow onion, finely minced
4 cloves garlic, minced
1 cup diced red bell pepper
1/2 to 1 teaspoon red pepper flakes (adjust to your preferred spice level)
1 (14.5 ounce) can beef broth, low sodium recommended
1 (28 ounce) can crushed tomatoes (high-quality for best flavor)
1/2 cup semi-dry red wine (such as Gallo Hearty Burgundy)
2 tablespoons fresh basil, finely chopped (or 1 1/2 teaspoons dried basil)
2 tablespoons fresh parsley, finely chopped (or 2 teaspoons dried parsley)
1 teaspoon fresh oregano, finely chopped (or 1/2 teaspoon dried oregano)
1/3 cup freshly grated Parmesan cheese, plus more for serving

Directions:
1. In a large, heavy-bottomed saucepan or Dutch oven, heat 1 tablespoon of extra virgin olive oil over medium-high heat. Add the bulk sausage and brown it thoroughly, using a wooden spoon to break it into crumbles as it cooks. Continue cooking until the sausage is completely cooked through and no longer pink. Remove the cooked sausage from the pan with a slotted spoon and set it aside, leaving any rendered fat in the pan.
2. Add the remaining 1 tablespoon of olive oil to the same pan. Introduce the sliced mushrooms and sauté them until they begin to brown and soften, approximately 4-5 minutes. It’s important not to add salt at this stage, as it can draw out moisture and prevent browning. Once the mushrooms have browned, add the minced onion, minced garlic, diced red pepper, red pepper flakes, and a generous pinch of salt and black pepper. Cook, stirring occasionally, until the onion and peppers are softened and translucent, which should take about 5 minutes.
3. Pour in the red wine, scraping the bottom of the pan with your wooden spoon to release any flavorful browned bits (this process is called deglazing and adds immense depth to the sauce). Continue to cook until the wine reduces by about half, which typically takes around 3 minutes, allowing its alcohol to evaporate and its flavors to concentrate.
4. Stir in the beef broth, crushed tomatoes, and the previously cooked sausage. If you are using dried herbs instead of fresh, add them at this stage to allow their flavors to meld into the sauce. Bring the sauce to a gentle bubble, then reduce the heat to medium-low. Let it simmer, uncovered, for 15 minutes, allowing the flavors to marry and deepen.
5. After simmering, stir in the fresh herbs (if using) and the 1/3 cup of grated Parmesan cheese. Taste the sauce and adjust the seasonings, adding more salt and pepper as needed to achieve your desired flavor profile.
