1 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon kosher salt

Sriracha Ganache:

1/4 cup heavy cream

1/2 cup dark chocolate, finely chopped or chips

3/4 teaspoon Sriracha sauce

Pinch of cayenne pepper (optional)

 

Directions:

 Cookies: 

1. Prepare Melted Chocolate Mixture: Fill a medium saucepan with about 1 inch of water and bring it to a gentle simmer over medium heat. In a medium heatproof bowl, combine 1 cup of semi-sweet chocolate chips and the softened unsalted butter. Place this bowl over the simmering water, ensuring the bottom of the bowl does not touch the water. Stir occasionally until the chocolate and butter are completely melted and smooth. Remove from heat and allow the mixture to cool slightly.

2. Whisk Dry Ingredients: In a small separate bowl, whisk together the all-purpose flour, baking powder, and kosher salt until well combined. Set aside.

3. Combine Wet Ingredients: In a large mixing bowl, whisk together the granulated sugar, brown sugar, instant espresso powder, large eggs, and vanilla extract until smooth and well incorporated.

4. Incorporate Chocolate Mixture: Add the slightly cooled melted chocolate and butter mixture to the sugar and egg mixture. Whisk until everything is fully combined and smooth.

9. Scoop and Bake: Using a 1-inch cookie scoop or a tablespoon, drop dollops of the chilled cookie dough onto the prepared baking sheet, ensuring you space the cookies about 3 inches apart to allow for spreading. Bake for 13 minutes.

10. Cool Cookies: Allow the baked cookies to rest on the baking sheet for at least 5 minutes before attempting to move them. They will be quite delicate when hot. After 5 minutes, carefully transfer them with a thin spatula to a wire rack to cool completely.

Sriracha Ganache:

1. Heat Cream: Heat the heavy cream in a small saucepan over medium heat until it is hot to the touch and just begins to simmer around the edges. Do not bring to a rolling boil.

2. Prepare Chocolate Mixture: While the cream is heating, place the finely chopped dark chocolate (or chips), Sriracha sauce, and the optional pinch of cayenne pepper into a small heatproof bowl.

3. Combine & Rest: Pour the hot cream directly over the chocolate mixture in the bowl. Let the mixture rest undisturbed for 3 minutes. This allows the heat from the cream to melt the chocolate.

4. Stir Until Smooth: After 3 minutes, use a small rubber spatula to gently stir the mixture. Continue stirring until the chocolate is completely melted and the ganache is smooth, glossy, and uniform.

5. Drizzle & Serve: Once the cookies are completely cooled, use a spoon or a fork to generously drizzle the Sriracha ganache over each cookie. Allow the ganache to set slightly before serving. Enjoy!
