Ingredients:

Roasted Marinara:

  • 2 pounds fresh tomatoes, such as Roma or beefsteak, cut into quarters
  • 1 large onion, peeled and cut into large chunks
  • 1 green bell pepper, cored, deseeded, and cut into large chunks
  • 2 cloves un-peeled garlic
  • 1 medium carrot, peeled and cut into large chunks
  • 2 tablespoons olive oil
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons grated Parmesan cheese
  • Salt and freshly ground black pepper to taste

Primavera Pasta:

  • 8 ounces uncooked Barilla Rigatoni pasta
  • 2 tablespoons olive oil
  • 1/2 teaspoon red pepper flakes (optional, for a touch of heat)
  • 1 cup chopped yellow squash
  • 1 cup chopped zucchini
  • 1 cup chopped broccoli florets
  • 1 cup sliced baby bella mushrooms
  • 1 cup chopped onion
  • Salt and freshly ground black pepper
  • Grated Parmesan cheese, for serving (optional)

Directions:

Roasted Marinara:

  3. Bake for approximately 40 minutes, or until the tomato wedges are beautifully wilted and slightly collapsed, and the edges of the onion and green pepper are tender and show a light, appealing char. Remove the sheet pan from the oven and allow the roasted ingredients to cool on the pan for about 5 minutes.
  4. Once slightly cooled, carefully remove the skin from the roasted garlic cloves. Transfer all the roasted vegetables, including the garlic, into the bowl of a food processor or a high-speed blender. Pulse until the mixture reaches your desired level of smoothness (some prefer a slightly chunkier sauce). Add the grated Parmesan cheese and pulse a few more times to fully combine. Taste and adjust seasoning with additional salt and pepper as needed. Finally, gently pulse in the fresh basil and parsley until just incorporated, preserving their fresh flavor and color.

Pasta Primavera:

  1. Bring a large pot of water to a rolling boil. Season the water generously with several pinches of kosher salt – this flavors the pasta from within. Stir in the Barilla Rigatoni and allow it to cook until it is perfectly al dente, typically about 12 minutes, or according to package directions. Once cooked, drain the pasta and set it aside.
  2. While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet or deep pan over medium heat. Add the chopped squash, zucchini, broccoli, mushrooms, chopped onion, and red pepper flakes (if using) to the skillet. It’s best to refrain from salting the vegetables at this stage to prevent them from releasing too much water too quickly. Cook, stirring occasionally, until the vegetables are tender-crisp and begin to show a slight golden-brown color, which should take about 10 minutes. Now, season the cooked vegetables with salt and freshly ground black pepper to taste.
  3. Stir the prepared roasted marinara sauce into the skillet with the vegetables. Cook, stirring gently, until the sauce is thoroughly heated through, which should take approximately 2 minutes.
  4. Finally, add the drained, cooked pasta to the skillet with the sauce and vegetables. Toss everything together until the pasta is fully coated with the rich marinara and fresh primavera vegetables. Serve immediately, topped with extra grated Parmesan cheese if desired, for an extra layer of savory flavor.
