It’s the ideal solution for those evenings when the heat is simply too overwhelming for anything more elaborate. A proper sit-down, oven-baked meal can wait for cooler days; summer nights call for light, refreshing, and easy-to-prepare dishes like this one.

Corn truly shines as the quintessential summertime vegetable. Its natural sweetness, delightful crunch, and incredible versatility make it a firm favorite for countless dishes. From savory sides to unexpected dessert elements (yes, even ice cream!), corn effortlessly elevates a meal. For this particular salsa, the star ingredient is fire-roasted corn, and for good reason. Grilling the corn until it achieves a slight char introduces an unparalleled depth of flavor. This process isn’t just about cooking; it’s about unlocking and enhancing the corn’s inherent sweetness, bringing forth a subtle nuttiness, and infusing it with an irresistible smoky aroma. The heat of the grill caramelizes the sugars, creating those beautiful charred bits that are packed with robust flavor. Trust us, taking the extra step to grill your corn transforms this salsa from good to absolutely phenomenal, adding layers of complexity that a simple boiled or steamed corn just can’t match.

Beyond the corn, the subtle addition of fire-roasted jalapeños is another game-changer. Grilling these peppers mellows their raw heat while intensifying their earthy, smoky notes. The result is a pleasant warmth that complements the sweetness of the corn without overpowering the dish. Each ingredient in this Black Bean & Fire Roasted Corn Salsa plays a crucial role in creating a harmonious blend of textures and tastes. The hearty black beans offer a protein-rich base and a creamy contrast to the crisp corn. Fresh, diced tomatoes provide a juicy burst of acidity, while minced red onion adds a sharp, piquant crunch. A generous squeeze of fresh lime juice brightens all the flavors, cutting through the richness and adding a zesty, refreshing tang. Finally, a sprinkle of vibrant, fresh cilantro introduces a herbaceous freshness that ties everything together perfectly. This combination doesn’t just look appealing; it delivers a symphony of flavors that dances on your palate.

This vibrant and flavorful Black Bean & Fire Roasted Corn Salsa is incredibly versatile, making it an ideal choice for any summer occasion. Whether you’re hosting a lively Fourth of July barbecue, throwing a casual backyard party, enjoying a relaxed picnic, or simply seeking a light and easy dinner when the heat makes extensive cooking undesirable, this dip fits the bill perfectly. It’s not just a dip for chips; think beyond the bowl! Spoon it over grilled chicken or fish for an instant flavor boost, use it as a fresh topping for tacos or burritos, or even incorporate it into a summer salad for an added burst of texture and taste. Its vibrant colors and fresh ingredients make it a visually appealing centerpiece on any table, promising to entice guests of all ages. Furthermore, it’s a healthy choice, packed with fiber from the black beans and corn, vitamins from the fresh vegetables, and beneficial antioxidants. It’s a guilt-free indulgence that proves healthy eating can be incredibly delicious and satisfying, especially during the warmer months.

Preparing this crowd-pleasing salsa is surprisingly simple, requiring minimal effort for maximum reward. The key steps are straightforward: grill your corn and jalapeños until beautifully charred, then combine them with the remaining fresh ingredients. Black Bean & Fire Roasted Corn Salsa

Yield: Approximately 2 cups

Total Time: 15 minutes

Prep Time: 5 minutes

Cook Time: 10 minutes

Ingredients:

  • 3 ears fresh corn, husked
  • 2 medium jalapeño peppers
  • 2 ripe tomatoes, seeded and finely chopped
  • 1/3 cup red onion, finely minced
  • 1 (14.5-ounce) can black beans, thoroughly drained and rinsed
  • 1 fresh lime, juiced (approximately 2 tablespoons)
  • 1/4 cup fresh cilantro, finely chopped
  • Salt and freshly ground black pepper, to taste
  • 1-2 tablespoons olive oil, for grilling

Directions:

  1. Preheat your charcoal or gas grill to a medium-high heat. Lightly drizzle the husked corn ears and whole jalapeño peppers with olive oil. Season them gently with salt and pepper.
  2. Place the corn and jalapeños directly on the hot grill. Grill, turning occasionally, until the corn is tender-crisp and exhibits beautiful char marks on all sides (approximately 8-10 minutes). Grill the jalapeños until their skin is blistered and slightly softened (about 5-7 minutes, turning frequently).
  3. Remove the grilled corn and jalapeños from the grill and allow them to cool slightly, making them easier to handle.
  4. Once cooled, carefully cut the kernels off the corn cobs. Slice the grilled jalapeños in half lengthwise, carefully remove the seeds and membranes (for less heat), and then finely dice them.
  5. In a large mixing bowl, combine the grilled corn kernels, diced jalapeños, drained and rinsed black beans, finely minced red onion, chopped fresh cilantro, and chopped tomatoes.
  6. Pour the fresh lime juice over the ingredients. Add salt and freshly ground black pepper to taste. Gently mix all the ingredients together until well combined.
  7. For best flavor, cover the bowl and place it in the refrigerator for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature with your favorite tortilla chips, or as a vibrant topping for grilled meats. Store any leftover salsa in an airtight container in the refrigerator for up to 3-4 days.
