Cumin-rubbed mahi mahi gets pan seared and topped with a spicy mixture of roasted tomatoes, crisp fennel, and Pinot Grigio.

Ingredients:

Mahi Mahi & Sauce: 

  • 1 and 1/2 tablespoons extra-virgin olive oil, divided
  • 2 pieces mahi mahi, about 1/2-3/4-inch thick
  • 1/2 teaspoon ground cumin
  • 1/2 cup thinly sliced fennel
  • 1 clove garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup Pinot Grigio
  • 2 tablespoons fresh basil, chopped
  • Salt and freshly ground black pepper, to taste

 Roasted Tomatoes:

  • 1 pint grape or cherry tomatoes
  • 1 tablespoon extra-virgin olive oil
  • Salt and freshly ground black pepper, to taste

Directions:

Roasted Tomatoes: 

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. Arrange the grape or cherry tomatoes evenly onto a baking sheet. Drizzle them generously with 1 tablespoon of extra-virgin olive oil, then season with a good pinch of salt and pepper. Gently toss or roll the tomatoes around on the sheet to ensure they are thoroughly coated.
  3. Bake for 30-35 minutes, or until the tomatoes have softened, begun to wilt, and some have lightly burst, releasing their sweet juices.

Mahi Mahi & Sauce: 

  1. Heat 1 tablespoon of the extra-virgin olive oil in a large sauté pan over medium heat. While the pan heats, season each side of the mahi mahi fillets with a generous pinch of salt and pepper. Evenly rub 1/8 teaspoon of ground cumin onto each side of the mahi mahi. Carefully add the seasoned fish to the hot pan. Cook for 4 minutes on each side, or until the fish is golden brown, cooked through, and flakes easily with a fork. Remove the fish from the pan and set it aside on a plate.
  2. Reduce the heat to medium-low. Add the remaining 1/2 tablespoon of olive oil to the same pan. Add the thinly sliced fennel and cook, stirring occasionally, until it begins to soften, about 2 minutes. Stir in the minced garlic and red pepper flakes. Continue to cook, stirring frequently, for another 1 minute, until fragrant.
  3. Pour in the 1/2 cup of Pinot Grigio. Allow the wine to simmer and reduce by half, which should take approximately 2 minutes, concentrating its flavors.
  4. Stir in the chopped fresh basil and the roasted tomatoes (including any juices from the baking sheet). Gently heat through for about 1 minute.
  5. To serve, plate each piece of pan-seared mahi mahi. Spoon a generous amount of the warm roasted tomato and fennel mixture over each fillet. This dish is excellent served over a bed of rice, couscous, or with a fresh green salad.
