Zest of 3 limes
1/4 cup lime juice (from approximately 3 limes)
2 tablespoons coconut or white rum
1 cup coconut milk

For the Mint & Rum Glaze

1/2 cup granulated sugar
1/4 cup water
1/2 cup fresh mint, roughly chopped
2 tablespoons coconut or white rum
1 tablespoon fresh lime juice

Directions:

  1. Preheat your oven to 325 degrees F (160 degrees C). Thoroughly grease and flour a standard bundt pan, ensuring every crevice is coated to prevent sticking.
  2. In a medium-sized bowl, whisk together the all-purpose flour, baking powder, and kosher salt until well combined. Set this dry mixture aside.
