Ingredients:

  • 2 tablespoons unsalted butter, divided
  • 3 tablespoons olive oil, divided
  • 4-5 boneless, skinless chicken breasts (approximately 1.5 pounds), thinly sliced or cubed
  • 1 teaspoon seasoned salt
  • 1 medium yellow squash, cut into 1/2-inch cubes (about 1 and 1/2 cups)
  • 1 small head broccoli, cut into small florets
  • 1 (8-ounce) package fresh sliced mushrooms
  • 1 red bell pepper, cored, seeded, and chopped
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional, for a hint of heat)
  • 1/2 cup dry white wine (such as Pinot Grigio or Sauvignon Blanc)
  • 1/2 cup whole milk
  • 1/2 cup heavy cream
  • 1 cup freshly grated Parmesan cheese, plus extra for serving and garnish
  • 16 ounces dried bowtie pasta (farfalle)
  • Salt and freshly ground black pepper, to taste
  • Fresh chopped parsley, for garnish (optional)

Directions:

  1. Cook the Chicken: Heat 1 tablespoon of butter and 2 tablespoons of olive oil in a large skillet or Dutch oven over medium-high heat. Season both sides of each chicken breast generously with seasoned salt and a pinch of black pepper. Add the chicken to the hot skillet and cook for 5-7 minutes per side, or until thoroughly cooked through and golden brown. Remove the cooked chicken from the pan and transfer it to a cutting board; allow it to rest for a few minutes before slicing or shredding.
  2. Cook the Pasta: While the chicken is cooking, bring a large pot of salted water to a rolling boil. Season the boiling water with several generous pinches of kosher salt. Add the bowtie pasta and stir well to prevent sticking. Cook, stirring occasionally, according to package directions until the pasta is al dente (firm to the bite), typically about 10-12 minutes. Before draining the pasta, reserve 1/2 cup of the starchy pasta water. Drain the remaining pasta and set aside.
  3. Sauté the Vegetables: Reduce the heat to medium on the same skillet used for the chicken. Add the remaining 1 tablespoon of butter and 1 tablespoon of olive oil. Add the prepared vegetables (excluding the minced garlic) and red pepper flakes to the pan. Stir to coat the vegetables evenly with the butter and oil. Avoid seasoning with salt at this stage to prevent the vegetables from releasing too much moisture and steaming. Cook, stirring frequently, until the vegetables are tender-crisp, about 5 minutes. Stir in the minced garlic and a generous pinch of salt and black pepper, cooking for an additional minute until fragrant.
  4. Build the Alfredo Sauce: Deglaze the pan by pouring in the white wine. Use a wooden spoon to scrape up any browned bits from the bottom of the pan, incorporating them into the liquid for added flavor. Continue to cook until the wine has reduced by approximately half, which should take about 3 minutes. Stir in the whole milk, heavy cream, and the reserved pasta water. Bring the mixture to a gentle boil, then reduce the heat and allow it to simmer and reduce slightly for 2-3 minutes, allowing the sauce to thicken slightly.
  5. Combine and Serve: Turn off the heat. Immediately add the cooked bowtie pasta and the freshly grated Parmesan cheese to the sauce in the skillet. Toss everything together until the pasta and vegetables are evenly coated in the creamy sauce and the cheese has melted beautifully. Taste and adjust seasoning with additional salt and pepper as needed. Slice the rested chicken and gently fold it into the pasta, or arrange it on top.
