  • 1 15.5-ounce can garbanzo beans, drained + liqueur reserved
  • 2 cloves garlic, roughly chopped
  • ½ cup tahini
  • Juice of 1 lemon
  • 1 teaspoon kosher salt, plus more to taste
  • ½ teaspoon ground cumin
  • ¼ cup extra-virgin olive oil, plus more for serving
  • Toasted pita chips for serving

Basil Pesto

  • 2 cups fresh basil
  • 2 cloves garlic, roughly chopped
  • ¼ teaspoon red pepper flakes, optional
  • ⅓ cup toasted pine nuts
  • ¼ cup grated parmesan cheese
  • 1 tablespoon lemon juice
  • ¼ cup extra-virgin olive oil
  • Kosher salt to taste

Roasted Cherry Tomatoes

  • 2 cups cherry tomatoes
  • 2 tablespoons olive oil
  • Kosher salt and pepper

Instructions

  • Preheat oven to 400 degrees F (200 degrees C). Add the cherry tomatoes in an even layer to a large baking sheet. Drizzle with olive oil. Using your hands, gently roll the tomatoes around to coat with the oil. Sprinkle with a few generous pinches of salt and pepper. Bake for 30-35 minutes, or until the tomatoes are wrinkled, softened, and slightly caramelized. Set aside to cool to room temperature.
  • While the tomatoes roast, prepare the hummus. Add the drained garbanzo beans, garlic, tahini, lemon juice, salt, and cumin to the bowl of a food processor. Pulse until smooth. With the processor running, slowly drizzle in the reserved bean liquid (aquafaba) until the mixture is exceptionally smooth and fluffy (I typically use all of the reserved liquid from one can). Continue to process while slowly drizzling in the extra-virgin olive oil. Season with additional salt to taste. If serving the hummus immediately, transfer it to a large platter or shallow serving bowl. If preparing ahead, transfer to an airtight container and store in the refrigerator until ready to use.
  • To make the pesto, add fresh basil leaves, garlic, optional red pepper flakes, grated Parmesan cheese, toasted pine nuts, and lemon juice to the bowl of a food processor. Pulse a few times to roughly combine the ingredients. With the food processor running, slowly drizzle in the extra-virgin olive oil until a smooth, vibrant green pesto forms. Season with salt and pepper to taste. If serving immediately, spoon the pesto generously over the prepared hummus and arrange the cooled roasted tomatoes on top of the pesto. Garnish with a sprinkle of chopped fresh basil and extra grated Parmesan cheese. Serve immediately with a side of toasted pita chips or your favorite dippers. If preparing ahead, transfer both the pesto and roasted tomatoes to separate airtight containers and store in the refrigerator until ready to use.

  1. If you’re not serving the hummus immediately, all of the individual components of this dish can be prepared up to 3 days in advance. For serving, spread a layer of hummus onto a platter or shallow serving bowl. Spoon the pesto over the hummus, then arrange the roasted tomatoes over the top. Garnish with fresh chopped basil and grated Parmesan cheese. The hummus is delicious served either cold or at room temperature.
