Place this bowl over a pot of simmering water, ensuring the bottom of the bowl does not touch the water. Cook, stirring occasionally with a rubber spatula, until the chocolate and butter are completely melted and the mixture is smooth and glossy.
  4. Remove the bowl from the heat, but keep it over the warm pot of water (or off the heat if preferred). Stir in both the granulated sugar and brown sugar until thoroughly combined and dissolved. The mixture should be smooth.
  5. Remove the bowl from the pot. Add the eggs to the chocolate mixture, one at a time, mixing gently until just combined after each addition. Be careful not to overbeat the batter at this stage, as this can lead to cakey brownies. Stir in the vanilla extract until fully incorporated.
