  • 1 (14.5-ounce) can fire roasted diced tomatoes, undrained
  • 1 (15.5-ounce) can cannellini beans, rinsed and drained
  • 1 cup frozen or fresh corn kernels
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste

Directions:

  1. Heat 1 tablespoon of extra-virgin olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Add the ground beef and season generously with a pinch of salt and pepper.
