Why Bacon Beer Cheese Soup with Crispy Potato Croutons is a Game Changer

Last week, I whipped up some Chipotle Pork Sliders with Honey Lime Slaw. While these sliders are absolutely delicious on their own, they truly find their perfect companion in this sensational soup. The rich, bold flavors of the soup complement the zesty sliders beautifully, creating a dynamic duo that will impress even the most discerning palates. It’s an instant classic pairing that will undoubtedly become a staple at your future gatherings.

A Symphony of Flavors: Thick, Hearty, and Unforgettable

This soup is a masterclass in comfort food. It’s incredibly thick, luxuriously hearty, and bursting with a complexity of flavors that dance on your tongue. The star of this culinary show is undoubtedly the beer. Even with a generous 14 ounces of perfectly shredded cheese melted into every spoonful, the distinct, bold character of the bock beer shines through, adding an unparalleled depth that elevates the entire dish. It’s not just a hint of beer; it’s a celebration of its malty, rich notes, making for an incredibly sophisticated yet approachable flavor profile.

The Magic of Bacon and Perfectly Crispy Potato Croutons

Did I mention bacon? Because there’s glorious, crispy bacon at every stage of this recipe. The foundation of this incredible soup starts with rendering thick-cut bacon, allowing its savory fat to infuse the base. It’s in this smoky, flavorful rendered bacon grease that the aromatic vegetables – onions, celery, and carrots – are sautéed, creating an initial layer of deep, rich flavor that will leave you wanting more. And just before serving, a generous sprinkle of crumbled, crispy bacon bits provides the perfect textural contrast and an extra punch of salty, smoky goodness.

But the indulgence doesn’t stop there. To take this soup to an entirely new level, we introduce homemade, crispy potato croutons. We use premium Idaho® baby Yukon Gold potatoes, known for their creamy texture and ability to crisp beautifully. These little gems are halved, tossed with a blend of olive oil and aromatic seasonings like smoked paprika, kosher salt, black pepper, and Italian seasoning, then roasted to a golden, crispy-crunchy perfection. Each hearty bowl of soup is then served with a generous mound of these irresistible potato croutons, offering a delightful textural surprise with every spoonful. Forget soggy bread croutons; these potato croutons are a game-changer, providing a savory, satisfying crunch that perfectly complements the creamy soup.

Crafting Your Culinary Masterpiece: Tips for Success

Making this Bacon Beer Cheese Soup with Crispy Potato Croutons is a straightforward process, but a few key details ensure a spectacular result. The choice of beer is crucial; a bock, pilsner, or pale ale will provide the right balance without overpowering the cheese. The blend of sharp cheddar, smoked gouda, and Velveeta creates a smooth, incredibly creamy, and flavorful cheese base that melts perfectly without becoming grainy. Don’t rush the simmering process; allowing the soup to gently thicken helps meld all the incredible flavors together.

Ingredient Spotlight: The Perfect Cheese Blend and Idaho Potatoes

The secret to this soup’s incredible creaminess and depth of flavor lies in its cheese selection. Sharp cheddar brings a classic, tangy bite, while smoked gouda adds a layer of sophisticated smokiness that pairs beautifully with the bacon. A touch of Velveeta ensures an unbelievably smooth, velvety texture that prevents the soup from separating and gives it that desirable “gooey” cheese pull. For the potato croutons, opting for Idaho® baby Yukon Gold potatoes is key. Their natural sweetness and waxy texture allow them to crisp up perfectly on the outside while remaining tender and creamy on the inside, making them far superior to traditional bread croutons for this dish.

Serving Suggestions and Party Planning

While this soup is magnificent on its own, it also makes an incredible pairing partner. Serve it alongside those Chipotle Pork Sliders mentioned earlier for an unforgettable meal, or offer it with crusty artisan bread for dipping. A simple green salad can also provide a refreshing contrast to the richness of the soup. For larger gatherings, this soup is a host’s dream. It can be prepared ahead of time and reheated gently on the stovetop or kept warm in a slow cooker, allowing you to enjoy the party without being tethered to the kitchen. Just remember to stir occasionally to maintain its luscious texture and prevent browning around the edges. Garnish with additional fresh scallions and extra crumbled bacon just before serving for a visually appealing and delicious finish.

Bacon Beer Cheese Soup with Crispy Potato Croutons

Yield: 6 servings

Total Time: 30 minutes

Prep Time: 5 minutes

Cook Time: 25 minutes

Ingredients:

Soup

  • 6 slices thick-cut bacon, cut into 1-inch pieces
  • 1 medium onion, diced
  • 2 celery ribs, finely diced
  • 1 large carrot, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon freshly chopped thyme
  • 1/4 cup all-purpose flour
  • 12 ounces beer (bock, pilsner, pale ale)
  • 2 cups chicken stock
  • 1 cup heavy cream
  • 1 heaping teaspoon dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 8 ounces grated sharp cheddar cheese
  • 4 ounces grated smoked gouda cheese
  • 2 ounces Velveeta, cut into 1-inch cubes
  • Salt and freshly ground black pepper, to taste
  • Sliced scallions for serving

Potato Croutons

  • 8 ounces Idaho® baby Yukon Gold potatoes, halved
  • 2 teaspoons olive oil
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon smoked paprika
  • 1/4 teaspoon Italian seasoning

Directions:

For the Soup

  1. In a large, heavy-bottomed pot or Dutch oven, cook the bacon over medium-high heat until it reaches a desired crispness. Using a slotted spoon, carefully transfer the crispy bacon pieces to a plate lined with paper towels to drain excess grease; set aside for garnish.
  2. Reduce the heat to medium. Add the diced onion, celery, and carrot to the pot with the reserved bacon grease. Season lightly with salt and pepper. Sauté, stirring frequently, for 5-6 minutes, or until the onion becomes translucent and the vegetables are tender. Stir in the minced garlic and fresh thyme; cook for an additional 2 minutes, stirring constantly until fragrant.
  3. Sprinkle the all-purpose flour over the vegetables in the pot. Cook, stirring constantly, for 1 minute to create a roux, allowing the flour to cook out and absorb the fat. Gradually pour in the beer, chicken stock, heavy cream, Dijon mustard, and Worcestershire sauce, stirring continuously to combine and prevent lumps. Bring the mixture to a gentle boil, then reduce the heat to medium-low and allow the soup to simmer for about 8 minutes, or until it has visibly thickened to your desired consistency.
  4. Remove the pot from the heat. Slowly add the grated sharp cheddar, smoked gouda, and cubed Velveeta, stirring gently until all the cheese has completely melted and the soup is smooth and creamy. Taste and adjust seasoning with additional salt and pepper as needed.
  5. Ladle the hot soup into bowls. Garnish generously with the crispy potato croutons, sliced scallions, and the reserved crumbled bacon. Serve immediately and enjoy!

For the Crispy Potato Croutons

  1. Preheat your oven to 425 degrees F (220 degrees C).
  2. Place the halved baby Yukon Gold potatoes in a small mixing bowl. Drizzle with olive oil. Sprinkle with kosher salt, black pepper, smoked paprika, and Italian seasoning. Toss thoroughly to ensure the potatoes are evenly coated with the oil and spices.
  3. Spread the seasoned potatoes in a single layer on a baking sheet. Bake for 15-20 minutes, or until the potatoes are beautifully golden brown, wonderfully crispy on all sides, and tender when pierced with a fork.
  1. Storage and Reheating: If you’re not planning to serve the entire batch immediately, allow the soup to cool completely before transferring it to an airtight container. Refrigerate for up to 3 days. Reheat gently on the stovetop over low heat, stirring occasionally, or use a slow cooker on the “Low” setting until warmed through. You may need to add a splash of milk or cream to achieve the original consistency.
  2. Serving a Crowd: For entertaining a large group, transfer the hot soup to the bowl of a slow cooker after it’s prepared. Select the “Keep Warm” setting. Stir the soup occasionally to prevent any skin from forming on top or browning around the edges, ensuring every guest enjoys a perfect serving.
