Ingredients:

  • 6 slices bacon, preferably thick-cut, diced into 1-inch pieces
  • 6 cups (approximately 2-3 large) sweet potatoes, peeled and cut into ½-inch cubes
  • 1 large yellow onion, finely diced
  • ½ teaspoon red pepper flakes (adjust to your preferred level of heat)
  • 2 cloves garlic, freshly minced
  • 2 teaspoons fresh chopped thyme leaves
  • ½ cup dried cranberries, for a burst of sweet and tart flavor
  • 1/3 cup toasted chopped Diamond Walnuts, for added crunch and richness
  • 3 scallions (green onions), thinly sliced, for garnish
  • Salt and freshly ground black pepper, to taste

Directions:

  1. In a large, heavy-bottomed sauté pan or skillet, cook the diced bacon over medium-high heat until it is beautifully crispy and rendered, typically about 7-10 minutes. Using a slotted spoon, carefully transfer the cooked bacon pieces to a plate lined with paper towels to drain. Set the crispy bacon aside. Reserve about 2 tablespoons of the flavorful bacon grease in the pan, discarding any excess. This reserved grease will add incredible depth to your hash.
  2. Reduce the heat to medium. Add the cubed sweet potatoes to the pan with the reserved bacon grease. Cook, stirring only occasionally, for about 10 minutes. The key here is to resist the urge to stir too frequently; allowing the potatoes to sit undisturbed for a few minutes at a time will help them develop a wonderfully crispy, golden-brown crust.
  3. Next, add the diced onions and red pepper flakes to the pan with the sweet potatoes. Continue to cook, stirring occasionally, for another 8 minutes, or until the onions begin to soften and become translucent.
  4. Stir in the minced garlic and the fresh chopped thyme. Continue to cook, stirring more often now, for an additional 2 minutes, or until the garlic becomes fragrant and the sweet potatoes are tender when pierced with a fork.
  5. Remove the pan from the heat. Season the hash generously with salt and freshly ground black pepper to taste. Finally, stir in the dried cranberries, the toasted walnuts, and the reserved crispy bacon.
