- 1 teaspoon espresso powder
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 3 tablespoons unsalted butter, melted and cooled
- 2 tablespoons coconut oil, melted and cooled
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup Greek yogurt, plain or vanilla
- 1/4 cup almond milk
- 1/4 cup strong brewed coffee
Glaze:
- 3/4 cup dark chocolate
- 3 tablespoons strong brewed coffee
Directions:
Donuts:
- Preheat oven to 350 degrees F. Spray a 6-cup donut pan with non-stick baking spray.
- In a bowl, whisk together first 7 ingredients. Set aside.
- In a large bowl, add both sugars, butter, and coconut oil. Whisk until smooth. Add the egg, vanilla extract, and Greek yogurt. Whisk until smooth. Whisk in the milk and a coffee until smooth.
- Add the dry ingredients to the bowl with the wet ingredients. Whisk until just combined.
- Fill a large zip-close bag with the donut batter. Snip one corner of the bag off with scissors. Pipe batter into each donut mold, filling it 3/4 full.
- Bake for 10-11 minutes, or until a toothpick inserted comes out clean. Allow the donuts to cool in the pan for 5 minutes on a wire rack. Remove the donuts and allow them to cool completely.
