- 3 stalks celery, chopped
- 3 cloves garlic, minced
- 1 and 1/2 pounds red or Yukon gold potatoes, cut into 1/2-inch cubes
- ½ cup white wine, I used Pinot Grigio
- 8 ounces clam juice
- 2 cups chicken stock
- 2 bay leaves
- 1 teaspoon Italian seasoning
- 2 10-ounce cans clams
- 2 cups heavy cream
- 3 tablespoons cornstarch
- Kosher salt and pepper to taste
- Chopped parsley for serving
Instructions
- In a large Dutch oven, brown bacon until crispy over medium heat. Transfer to a paper-towel lined plate; set aside. Reserve 2 tablespoons of bacon fat in the bottom of the pan.
- Add the butter to the pan with the bacon fat. Once the butter has melted, add the leeks and celery; cook, stirring occasionally, until tender, about 4-5 minutes. Add the garlic and cook an additional 1-2 minutes until fragrant, stirring often.
