Wet Ingredients:

  • 1/2 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 4 tablespoons unsalted butter, melted and cooled
  • 4 tablespoons coconut oil, melted and cooled
  • 2 large eggs, at room temperature
  • 3/4 cup low-fat buttermilk, at room temperature
  • 2 teaspoons vanilla extract

Dry Ingredients & Add-ins:

  • 1 cup whole wheat flour (recommended: Bob’s Red Mill Organic)
  • 1/2 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1 teaspoon instant espresso powder (optional, enhances chocolate flavor)
  • 1 cup dark chocolate chips or chunks
  • 36 mini marshmallows (3 per muffin)
  • 1/3 cup peppermint chips (e.g., Andes brand)

Directions:

1. Preheat your oven to 425°F (220°C). Line a 12-cup standard muffin tin with paper liners or grease it thoroughly.

2. In a large mixing bowl, combine all the wet ingredients: granulated sugar, brown sugar, melted and cooled butter, melted and cooled coconut oil, eggs, low-fat buttermilk, and vanilla extract. Whisk thoroughly until well combined and smooth.

3. In a separate medium bowl, whisk together all the dry ingredients: whole wheat flour, all-purpose flour, cocoa powder, baking powder, baking soda, kosher salt, and instant espresso powder (if using). Ensure there are no lumps.

4. Gradually add the dry ingredients to the bowl with the wet ingredients. Stir gently with a spatula or wooden spoon until just combined. Be careful not to overmix; a few streaks of flour are perfectly fine. Overmixing can lead to tough muffins. Gently fold in the dark chocolate chips.

5. Divide the muffin batter evenly among the prepared muffin cups, filling each approximately 3/4 full. On top of each muffin, nestle 3 mini marshmallows into the batter. Then, sprinkle about 1 teaspoon of peppermint chips over the top of each muffin.

6. Immediately reduce the oven temperature to 350°F (175°C) and place the muffin tin in the preheated oven. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out with moist crumbs attached (not wet batter). Avoid overbaking, as this can dry out the muffins.

7. Allow the muffins to cool in the muffin tin for 5 minutes before carefully transferring them to a wire rack to cool completely. For an irresistible experience, serve them warm, when the marshmallows are still gooey and the chocolate is melted.

8. Store any leftover muffins in an airtight container at room temperature for up to 2 days to maintain their freshness and moisture.
