The Heart of Shortbread: Buttery Perfection and Balanced Flavor

The secret to truly outstanding shortbread lies in the quality and quantity of butter, and this recipe doesn’t hold back. We use two full sticks of unsalted butter, ensuring a profoundly rich and tender crumb that defines authentic shortbread. The butter contributes not only to the luxurious texture but also to the golden hue and enticing aroma that fills your kitchen as these cookies bake.

Beyond the butter, a thoughtful addition of kosher salt plays a crucial role. While many might shy away from a full teaspoon of salt in a sweet cookie, here it’s a game-changer. The salt doesn’t make the cookies savory; instead, it amplifies the sweetness of the granulated and brown sugars, creating a delectable sweet-and-salty contrast that modern palates crave. This balance makes each cookie incredibly addictive, ensuring you’ll reach for just one more, bite after satisfying bite.

Essential Ingredients for Gluten-Free Shortbread Success

Achieving the perfect gluten-free shortbread hinges on selecting the right ingredients and understanding their roles:

  • Unsalted Butter: As mentioned, quality butter is paramount. Unsalted butter gives you control over the final salt content, allowing for the precise balance we aim for.
  • Granulated and Brown Sugar: The combination of these two sugars provides both sweetness and a subtle depth of flavor. Granulated sugar contributes to the crisp texture, while a touch of brown sugar adds a delicate chewiness and a hint of caramel notes.
  • Vanilla Bean Paste and Vanilla Extract: Using both vanilla bean paste and a dash of vanilla extract provides a complex and rich vanilla flavor that elevates the overall taste profile. The paste, with its visible vanilla specks, also adds a gourmet touch. If you don’t have paste, a slightly increased amount of extract can be substituted.
  • Gluten-Free All-Purpose Flour: This is where careful selection matters for gluten-free baking. We recommend a high-quality 1-to-1 gluten-free baking flour blend, specifically one that contains xanthan gum. Xanthan gum is vital in gluten-free recipes as it mimics the elasticity and binding properties of gluten, preventing the cookies from spreading too much and ensuring a tender, cohesive texture. Bob’s Red Mill Gluten-Free 1 to 1 is a fantastic choice that consistently yields excellent results.
  • Kosher Salt: For that irresistible sweet and salty punch, kosher salt is preferred for its larger flakes and cleaner taste compared to table salt.
  • Semi-Sweet Chocolate Chips: These provide bursts of rich chocolate throughout the buttery shortbread. Feel free to adjust the quantity slightly to your preference, or even chop a bar of high-quality chocolate for a more artisanal feel.

Two Classic Methods to Bake Your Shortbread: Choose Your Style

This versatile shortbread dough can be prepared using two popular methods, each offering a slightly different result. Whether you prioritize perfectly uniform shapes or quick convenience, we have you covered.

1. Achieving Perfectly Shaped Rolled Shortbread

For those who appreciate aesthetically pleasing, uniformly shaped cookies, the roll-and-cut method is ideal. While it requires a bit more hands-on time, the rich, buttery, and chocolate-infused result is absolutely worth the effort. There’s a special satisfaction in creating these elegant cookies, perfect for gifting or a fancy tea party.

Preparing Gluten-Free Chocolate Chip Shortbread Cookies dough for cutting

Tips for Perfect Rolled Shortbread:

  1. Divide and Flatten the Dough: After mixing, divide the dough in half. Wrap each half individually in plastic wrap and gently flatten it into a 2-inch thick disc. This makes chilling more efficient and prepares the dough for easier rolling later.
  2. Initial Chill is Key: Refrigerate the flattened dough discs for at least 30 minutes. This chilling time firms up the butter, making the dough less sticky and easier to handle and roll without excessive flour.
  3. Work with One Disc at a Time: Keep the second disc of dough in the refrigerator while you work with the first. This prevents the dough from becoming too warm and soft, which can lead to sticking and difficult rolling.
  4. Warm the Dough Slightly Before Rolling: Straight out of the fridge, the dough might be a bit too firm. Work the dough with your hands for a minute or two to slightly warm the butter. This makes the dough more pliable and easier to roll without cracking.
  5. Lightly Flour Your Surface: Dust your work surface and rolling pin with a small amount of gluten-free all-purpose flour. This prevents sticking, but avoid using too much, as it can make the cookies dry.
  6. Roll to the Right Thickness: Roll the dough out to an even 1/8-inch thickness. Consistency is important for even baking. If the dough starts cracking as you roll, it’s likely too cold. Gently work it with your hands a bit more to warm it up, then try rolling again.
  7. Cutting the Cookies: Use a round cookie cutter (or any shape you prefer) to cut out the dough. You’ll need to apply a bit of force to cut cleanly through the chocolate chips. Place the cut cookies on a parchment-lined baking sheet, leaving about 2 inches between them.
  8. Bake Until Lightly Golden: Bake for approximately 15 minutes, or until the edges are lightly golden brown. Shortbread should remain pale in the center.

2. Effortless Slice-and-Bake Shortbread for Convenience

If you’re short on time or prefer a more rustic look, the slice-and-bake method is your best friend. It’s incredibly simple and still yields wonderfully delicious cookies, proving that sometimes, looks really don’t matter as much as taste!

Tips for Perfect Slice-and-Bake Shortbread:

  1. Form a Log: Instead of dividing and flattening the dough, roll the entire batch into a uniform 3-inch round log. Aim for a consistent diameter to ensure even cookie sizes.
  2. Chill Adequately: Wrap the dough log tightly in plastic wrap and refrigerate for 30-45 minutes. The chilling is crucial here. If the dough is rock hard, you’ll struggle to cut through the chocolate chips without the log chipping and crumbling. The ideal chill time allows the dough to firm up enough to hold its shape, but remain workable so your knife can glide easily through the chocolate chips.
  3. Use a Serrated Knife: For the cleanest cuts, use a sharp serrated knife. Carefully slice the log into 1/4-inch thick rounds. The serrated edge helps to saw through the chocolate chips rather than just pushing them, preventing crumbling.
  4. Spacing on the Baking Sheet: Place the sliced cookies on a parchment-lined baking sheet, spaced about 2 inches apart.
  5. Bake to Golden Perfection: Bake for about 15 minutes, or until the edges are lightly golden brown.

Ingredients

  • 2 sticks unsalted butter
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 teaspoon vanilla bean paste
  • ½ teaspoon vanilla extract
  • 2 cups gluten-free all-purpose flour, I used Bob’s Red Mill Gluten-Free 1 to 1
  • 1 teaspoon kosher salt
  • ¾ cup semi-sweet chocolate chips

Instructions

  1. In a stand mixer fitted with the paddle attachment, beat butter, granulated sugar, brown sugar, vanilla bean paste, and vanilla extract until light in color, about 1 minute.
  2. Scrape down the sides of the bowl. With the mixer on low, add the flour and salt. Beat until just combined. Add the chocolate chips and mix to blend.
  3. If you’re rolling out the dough, divide the dough in half and wrap each half in plastic wrap. Flatten each ball of dough into a 2-inch thick disc. Refrigerate for 30 minutes.
  4. Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.
  5. Remove the dough from the refrigerator and work the dough with your hands to warm the butter so it’s easier to handle and roll. Lightly dust your surface with gluten-free all-purpose flour. Roll the dough out to 1/4-inch thick. If the dough is cracking as you roll it out, it’s too cold. Work it a bit more to warm it up and try rolling it out again. Using a round cookie cutter, cut out the dough and place it on a parchment-lined baking sheet. You’ll have to use a bit of force to get through the chips. Place the cookies on the parchment-lined baking sheet 2 inches apart. Bake for 15 minutes, or until lightly golden brown.
  6. If you’re doing the slice and bake method, roll the dough into a 3-inch round log. Wrap the log in plastic wrap and refrigerate for 30-45 minutes. Using a serrated knife, carefully slice 1/4-inch thick rounds. Place the cookies on the parchment-lined baking sheet 2 inches apart. Bake for 15 minutes, or until lightly golden brown.
  7. Cool the cookies completely before storing in an airtight container. The cookies will stay fresh for up to 5 days.

Notes

  1. If you don’t have vanilla bean paste, substitute 1 and 1/2 teaspoons vanilla extract.
  2. I use Bob’s Red Mill Gluten-Free 1 to 1 Baking Flour. When baking with gluten-free flour blends, be sure to choose a blend with xanthan gum. It helps prevent spreading and provides a better texture.
