I always make a beeline for the pickle vendor, whose barrels overflow with an array of choices: half-sour, full-sour, spicy, and many more. It’s an experience for all the senses, a vibrant tapestry of community and culinary delight.

My mom and I have a cherished tradition of visiting this market almost every Sunday throughout the season. We aim to arrive right at opening to beat the crowds, which grow quickly, and secure one of the coveted parking spots. Most importantly, we always arrive hungry! The market’s omelet bar is legendary – a perfect start to a morning of exploring and gathering ingredients. Lemon Risotto

This creamy Lemon Risotto bursts with the bright, refreshing flavor of fresh lemons and rich Parmesan cheese, making it the perfect spring main dish or side.

Cook Time: 30 minutes

Ingredients:

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon unsalted butter
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup arborio rice
  • 1/3 cup white wine (such as Gallo Family Pinot Grigio)
  • 3 and 1/2 cups chicken or vegetable stock
  • Zest and juice of 1 lemon
  • 1/4 cup grated parmesan cheese, plus more for topping
  • Salt and pepper to taste

Directions:

  1. Bring the chicken stock or vegetable stock to a simmer in a saucepan over medium-low heat. Keep it warm throughout the cooking process.
  2. Heat olive oil and butter in a large saucepan or Dutch oven over medium-low heat. Add the chopped onions and minced garlic; sauté for 4-5 minutes until the onions become translucent and fragrant, taking care not to brown the garlic.
  3. Add the arborio rice to the pan and sauté, stirring frequently, until the rice grains are slightly toasted, nutty, and fragrant, about 3-4 minutes. This step helps to ensure each grain absorbs the liquid evenly.
  4. Pour in the white wine and cook, stirring continuously, until the wine completely reduces and is absorbed into the rice, which takes approximately 2 minutes.
  5. Begin ladling in the warm stock, one ladle (about 1/2 cup) at a time, stirring frequently. Allow most of the stock to absorb into the rice before adding the next ladle. Continue this process, adding stock one ladle at a time, until the rice is al dente – tender with a slight chew in the center – but not mushy. This usually takes about 25-30 minutes.
  6. Once the desired consistency is reached, stir in the fresh lemon zest, lemon juice, and 1/4 cup of grated Parmesan cheese. Season with salt and freshly ground black pepper to taste.
  7. Garnish each serving with extra fresh lemon zest and a generous grating of fresh Parmesan cheese. Serve your delicious Lemon Risotto immediately to enjoy its optimal creamy texture.
