  2. Cool the Potatoes: Carefully drain the par-boiled potatoes in a colander. Immediately rinse them thoroughly with cold water to stop the cooking process and prevent them from becoming mushy. Allow the potatoes to cool completely in the colander, draining any excess water, before moving to the grilling step.
  3. Prepare for Grilling: While the potatoes cool, preheat your gas or charcoal grill to medium-high heat (about 375-400°F or 190-200°C). If using a gas grill, brush the grates with a little olive oil to prevent sticking. Place the cooled, room-temperature potatoes in a grill-safe skillet or a sturdy grill basket. Drizzle the remaining 1 tablespoon of olive oil over the ears of corn and season with salt and pepper as well.

Transfer the grilled potatoes and the fresh corn kernels to a large mixing bowl. Add the minced jalapeño, diced red pepper, diced red onion, freshly chopped cilantro, and sliced scallions to the bowl. Gently fold all the ingredients together to combine them thoroughly.
