As I share this incredible recipe with you today, my mind is already wandering to another source of pure joy: Charleston, South Carolina. Tomorrow, I will finally be back in the charming city that captured my heart the moment I first stepped onto its cobbled streets. There’s a magic to Charleston, a unique blend of history, beauty, and hospitality that has called me back time and again. It’s a place where every corner tells a story, and every meal is an experience.

My initial journey to Charleston was a personal triumph – a graduation gift to myself after three intensely challenging years. During that period, I was deeply immersed in earning my undergraduate degree in English Literature, while simultaneously working full-time and nurturing this very website. The phrase “busy” hardly captures the relentless schedule and dedication required. Charleston became my sanctuary, a reward for all the hard work, offering a much-needed escape into its serene beauty and vibrant culture. The city felt like a grand embrace, offering respite and inspiration.

Five years have passed since that first captivating visit, and the longing to return to Charleston has only grown stronger. This historic Southern gem, with its pastel-colored houses, ancient oak trees draped in Spanish moss, and cobblestone alleys, has held a special place in my heart, often invoking a pleasant “homesickness” for a place I don’t technically call home. Now, the dream is finally becoming a reality. This trip is extra special because it marks my first vacation with my mom – a truly anticipated mother-daughter adventure! It took some convincing, but after her inaugural flight last year, she’s bravely agreed to embark on another aerial journey. Sharing this beloved city with her, seeing it through her eyes, will undoubtedly make this trip even more memorable and joyful.

We’ll explore charming cafes, bustling markets, and award-winning restaurants, savoring the rich flavors that define Southern cooking. And, for a touch of adventure, we’ll be seeking out a few of Charleston’s hidden prohibition-style bars, adding a dash of old-world charm and intrigue to our culinary exploration. It’s not just about eating; it’s about experiencing the vibrant culture and history woven into every dish and every sip.

Ingredients

  • ½ cup unsalted butter
  • ½ cup creamy peanut butter
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 and 1/4 cups gluten-free all-purpose flour
  • ¼ cup teff flour
  • 1 teaspoon baking powder
  • 2 7-ounce milk chocolate bars
  • 1 7-ounce container marshmallow fluff

Instructions

  • Preheat oven to 350 degrees F. Line an 8-inch-by-8-inch square baking pan with parchment paper, ensuring the paper overlaps on all sides for easy removal later.
  • In the bowl of a stand mixer fitted with a paddle attachment (or using a large bowl and a handheld mixer), combine the unsalted butter, creamy peanut butter, granulated sugar, and brown sugar. Beat the mixture until it becomes light and fluffy, which typically takes about 1 minute. Stop the mixer, scrape down the sides of the bowl to ensure everything is incorporated, then add the large egg (at room temperature) and vanilla extract. Continue to beat until all ingredients are thoroughly combined.
  • Add the dry ingredients—gluten-free all-purpose flour, teff flour, and baking powder—to the wet mixture in the bowl. Beat on low speed until the dry ingredients are just combined, being careful not to overmix. Scrape down the sides of the bowl as needed to ensure a uniform batter.
  • Divide the batter into two portions: use 2/3 of the batter for the base and reserve the remaining 1/3 for the topping. Press the larger portion (2/3) of the batter evenly into the bottom of the prepared baking pan. Arrange the milk chocolate bars in an even layer over the batter, breaking them into pieces if necessary to cover the surface. Gently press down on the chocolate to help it adhere to the peanut butter base. Next, spread the marshmallow fluff evenly over the chocolate layer, ensuring a smooth, continuous topping. Finally, crumble the reserved 1/3 of the batter evenly over the marshmallow cream, creating a delightful crumb topping.
  • Bake the bars in the preheated oven for 25-30 minutes, or until the topping is beautifully golden brown and the edges are set. Once baked, remove the pan from the oven and allow the bars to cool completely on a wire rack before attempting to cut them into squares. Cooling is crucial for clean cuts and for the layers to fully set.

Notes

  1. For the best gluten-free results, select a gluten-free all-purpose flour blend that already contains xanthan gum. This ingredient helps with the structure and texture of gluten-free baked goods. I personally recommend Bob’s Red Mill 1-to-1 Baking Flour for its consistent performance.
  2. If you don’t have milk chocolate bars readily available, an excellent substitute would be 8 ounces of your favorite chocolate chips or chunks. When using chips or chunks, make sure to gently press them into the base batter layer. This small step helps prevent them from lifting or shifting when you spread the marshmallow fluff on top, ensuring an even and delightful marshmallow layer.
