Whether you’re seeking a nutritious breakfast on the go, a satisfying afternoon snack, or a delightful dessert, these bars deliver on all fronts, inviting you to savor every bite with absolute confidence.
The creation of these scrumptious bars stems from a very personal journey—a recently developed and rather unwelcome gluten intolerance. This dietary shift prompted a significant re-evaluation of my cooking and baking practices. The transition to gluten-free ingredients has certainly presented its challenges, a struggle that many of you might intimately understand. It’s not just about swapping ingredients; it’s about re-learning textures, flavors, and the very chemistry of baking.
There were days when I felt perpetually hungry, staring into the pantry with no clear idea of what I could safely and enjoyably eat. This period of adjustment has been a true test of culinary creativity and patience. While life’s immediate demands, including preparing for a much-needed vacation, have occupied my time, I’m committed to delving deeper into gluten intolerance upon my return from Chicago next week. I plan to hit the books hard, researching the best ways to manage this condition and discover even more delicious and healthy alternatives. Until then, delightful recipes like these crumb bars are a lifesaver, ensuring I’m never “perpetually hungry” for long.
During this challenging period, I’ve found an unexpected hero in my very generous stash of Diamond of California nuts. When they sent me a year’s supply of nuts a few months ago, I was genuinely overwhelmed. My living room was transformed into a veritable nut warehouse—I was literally swimming in pecans, almonds, walnuts, hazelnuts, and cashews! It felt like a scene straight out of Disney’s A Christmas Story, where Scrooge gleefully swam in his vault of money, except my opulent pool was filled with towering bags of premium tree nuts. Little did I know how invaluable this bounty would become.
My once-massive nut collection has been dwindling steadily, serving as the foundation for countless meals and snacks. I’ve been relying heavily on toasted pecans, crafting flavorful Apple Pie Overnight Oatmeal, whipping up aromatic Chai Spiced Granola, and enjoying an endless supply of Honey Almond Butter Mini Granola Cups over the past few weeks. It’s been all nuts, all the time—and I’m not complaining! The versatility and nutritional punch they offer are simply incredible, making them indispensable in my gluten-free, vegan kitchen.

Pin Recipe
Ingredients
- 2 cups old-fashioned oats, certified gluten-free
- 1 and 1/2 cups pecans, divided
- 4 tablespoons coconut oil, melted and divided
- 2 tablespoons maple syrup, divided
- 1 teaspoon vanilla extract
- Pinch of kosher salt
- ½ teaspoon ground cinnamon
- 1 flax egg (see notes for preparation)
- 1 cup almond butter
- ½ cup, plus 2 tablespoons strawberry jam
Instructions
- Preheat oven to 350 degrees F (175°C). Line an 8-inch-by-8-inch square baking pan with parchment paper so that it overlaps on each side, creating a sling for easy removal.
- In the bowl of a food processor, combine 1 1/2 cups of oats, 1 cup of pecans, ground cinnamon, and a pinch of salt. Pulse a few times until the ingredients are well combined and the pecans are finely chopped. Add 3 tablespoons of melted coconut oil, 1 tablespoon of maple syrup, the prepared flax egg, and vanilla extract to the bowl. Pulse again until the mixture comes together to form a loose, sticky dough ball. Transfer this dough into the prepared baking pan. Using your fingers or the back of a spoon, firmly press the mixture into an even layer, covering the entire bottom of the pan.
- Using a rubber spatula, carefully spread the almond butter evenly over the oat mixture, ensuring a smooth and consistent layer. Next, gently spread the strawberry jam on top of the almond butter layer.
- Without needing to clean the food processor bowl, add the remaining 1/2 cup of oats, 1/2 cup of pecans, 1 tablespoon of coconut oil, and 1 tablespoon of maple syrup. Pulse until the mixture forms a coarse, crumbly streusel topping. Evenly sprinkle this crumble mixture over the strawberry jam layer, then gently press the crumble into the jam to secure it.
- Bake for 30-35 minutes, or until the top is golden brown and the edges are lightly crisp. Remove the pan from the oven and allow the bars to cool completely in the pan on a wire rack for at least 30 minutes before attempting to remove them. Once cooled, use the parchment paper overhangs to lift the bars out of the pan. Cool completely before slicing into individual bars.
- These delicious bars will keep well at room temperature in an airtight container for 2-3 days. For extended freshness, store them in the refrigerator in an airtight container for 5-7 days. If stored in the refrigerator, allow the bars to sit out for about 15 minutes to come to room temperature before enjoying, as this enhances their texture and flavor.
Notes
- To make a flax egg: In a small bowl, combine 1 tablespoon of flaxseed meal with 2 1/2 tablespoons of water. Stir thoroughly to combine and let the mixture sit for 5 minutes until it thickens and achieves an egg-like consistency. This acts as a binder in vegan baking.
