This Spring Pea & Asparagus Salad with Lemon Dill Vinaigrette perfectly encapsulates the essence of the season, making it an ideal centerpiece for your upcoming picnics, barbecues, and al fresco dining. Bursting with the crispness of snap peas, the delicate sweetness of English peas, and the tender bite of fresh asparagus, this salad is a true ode to springtime produce. Crowned with generous shavings of nutty Parmigiano Reggiano cheese and brightened by a zesty homemade lemon dill vinaigrette, it’s a dish that promises to invigorate your palate and elevate any gathering.

Embracing the Essence of Spring: Why Seasonal Eating Matters
There’s an unparalleled joy that comes from cooking with produce harvested at its peak. Nothing quite compares to the vibrant colors, robust flavors, and superior nutritional value of seasonal ingredients. Visiting local farmers’ markets as soon as they open for the season is a cherished ritual for many, myself included. The anticipation of discovering freshly picked vegetables, still retaining the dew of the morning, is a culinary delight. Unlike their supermarket counterparts, which often travel long distances, local seasonal produce is typically harvested at optimal ripeness, offering a taste experience that is simply unmatched. This commitment to fresh, peak-season ingredients is precisely what makes this Spring Pea & Asparagus Salad so exceptionally delicious and truly unforgettable.
My quest for the finest ingredients often borders on obsessive. I believe that the success of any dish hinges on the quality of its components. While a regular grocery store can certainly yield good results, there’s an undeniable charm and quality at a farmers’ market. Every asparagus spear, every pea pod, every bunch of dill seems to have been selected with care, ensuring that only the most pristine examples make it to the display. This dedication to quality ensures that the foundational elements of this salad – the peas, asparagus, and fresh dill – are at their absolute best, providing a flavor profile that is both intense and exquisitely delicate.

The Star Ingredients: A Symphony of Spring Flavors
This vibrant spring salad is a carefully composed medley of some of my most beloved green vegetables, each playing a crucial role in creating a harmonious blend of textures and tastes. The combination of crisp snap peas, sweet English peas, and tender-crisp asparagus forms the heart of this dish, offering a refreshing and satisfying experience with every forkful.
Crisp Asparagus: The Green Spear of Spring
Asparagus is, without a doubt, one of the quintessential vegetables of spring. Its elegant spears boast a distinctive earthy flavor and a delightful crunch when properly cooked. I find myself constantly drawn to it during its short season, stocking up whenever possible. For this salad, fresh asparagus is paramount. When selecting asparagus, look for firm, bright green stalks with tightly closed tips. Avoid any with withered or limp spears. Trimming the woody ends is essential for a pleasant texture; simply snap the ends where they naturally break. Cutting the spears into 2-inch pieces ensures that each bite of the salad offers a perfect balance of ingredients.
Sweet Peas: Snap Peas and English Peas for Double Delight
The peas in this salad truly sing of spring. We’re incorporating two types for maximum flavor and texture contrast: crunchy snap peas and delicate, sweet English peas. Snap peas provide a wonderful crisp bite and vibrant sweetness, while English peas, with their softer texture and concentrated sweetness, add a depth of flavor that is simply irresistible. If you’re lucky enough to find fresh-shucked English peas, seize the opportunity – their flavor is truly superior. However, high-quality frozen English peas are a perfectly acceptable substitute. Just be sure to thaw them properly and pat them dry to prevent excess moisture in the salad. The combination of these two pea varieties creates an intricate texture profile that keeps every bite exciting.
The Creamy Foundation: Red Potatoes
While green vegetables are the stars, the inclusion of creamy red potatoes provides a grounding element and a delightful textural contrast. Cooked just until fork-tender, these potatoes absorb the flavors of the vinaigrette beautifully, adding a satisfying earthiness and a smooth texture that complements the crispness of the peas and asparagus. Their gentle presence makes the salad more substantial, transforming it from a simple side into a more complete and satisfying meal.

Elevating the Experience: Authentic Parmigiano Reggiano
What truly elevates this delicious trio of green veggies and creamy potatoes is the luxurious addition of Parmigiano Reggiano cheese. This isn’t just any cheese; authentic Parmigiano Reggiano, with its distinct nutty, salty, and slightly fruity flavor, is a game-changer. I prefer to shave large, delicate ribbons of this exquisite cheese over the salad just before serving. These substantial shavings not only add a beautiful visual appeal but also deliver an incredible burst of umami and a melt-in-your-mouth texture that contrasts wonderfully with the crisp vegetables. The depth of flavor it imparts is simply unparalleled, transforming a simple vegetable salad into something truly gourmet. And for an extra layer of flavor, I also grate a little bit of Parmigiano Reggiano directly into the vinaigrette, ensuring its rich character permeates every single ingredient.
The Bright Finish: Zesty Lemon Dill Vinaigrette
No spring salad is complete without a dressing that harmonizes and brightens all the components. Our homemade Lemon Dill Vinaigrette does just that, tying every flavor together with its vibrant, herbaceous notes. The tartness of fresh lemon juice cuts through the richness of the cheese and olive oil, while the fresh dill adds an aromatic, slightly anise-like freshness that perfectly complements the spring vegetables. A hint of Dijon mustard provides a subtle tang and helps emulsify the dressing, and a touch of honey balances the acidity, creating a perfectly rounded flavor profile. This vinaigrette isn’t just a dressing; it’s the finishing touch that truly defines the character of this Spring Pea & Asparagus Salad, making it irresistibly refreshing and incredibly flavorful.

Crafting Your Perfect Spring Pea & Asparagus Salad
Preparing this salad is remarkably simple, yet the results are incredibly impressive. The key lies in precise cooking of the vegetables to ensure they retain their vibrant color and tender-crisp texture. Blanching is the method of choice here – a quick dip in boiling, salted water followed by an immediate plunge into an ice bath. This technique halts the cooking process, preserving the vegetables’ integrity and enhancing their natural brightness. For the vinaigrette, it’s all about shaking things up. A simple mason jar becomes your best friend, allowing for easy mixing and emulsification. The combination of tart lemon, fresh dill, crunchy vegetables, and the savory depth of Parmigiano Reggiano cheese creates an absolutely sensational salad, perfect for ushering in the warmer days and the start of grilling season. This healthy and easy recipe is sure to become a spring favorite in your culinary repertoire.

Spring Pea & Asparagus Salad with Lemon Dill Vinaigrette
Yield: 6-8 servings
Total Time: 17 minutes
Prep Time: 5 minutes
Cook Time: 12 minutes
Ingredients:
Salad
- 4 medium red potatoes, thoroughly washed, halved and quartered
- 10 ounces fresh English peas, shelled (or high-quality frozen)
- 10 ounces fresh snap peas, strings removed if necessary
- 1 pound fresh asparagus, woody ends trimmed and cut into 2-inch pieces
- 1/4 cup roughly chopped fresh dill, plus more for garnish
- 1 cup authentic Parmigiano Reggiano, thinly shaved with a vegetable peeler
Vinaigrette
- 1/2 cup high-quality extra virgin olive oil
- Juice of 2 large, fresh lemons (approximately 1/4 cup)
- 1 teaspoon creamy Dijon mustard
- 2 tablespoons finely grated Parmigiano Reggiano
- 2 tablespoons finely chopped fresh dill
- 1/2 teaspoon honey (adjust to taste for sweetness balance)
- 1/2 teaspoon sea salt, plus more to taste
- 1/4 teaspoon freshly ground black pepper, plus more to taste
Directions:
- Begin by preparing the vegetables. Bring a large pot of water to a rolling boil. Generously season the water with salt, as this helps to season the vegetables from within.
- Carefully add the halved and quartered red potatoes to the boiling water. Cook for 8 minutes, or until they are just short of being fork-tender. This ensures they maintain a slight bite. Then, add the snap peas, English peas, and cut asparagus to the pot with the potatoes. Continue to cook for an additional 2 minutes. The vegetables should be bright green and crisp-tender. Promptly drain the vegetables using a colander and immediately rinse them thoroughly with very cold water (or plunge into an ice bath) to stop the cooking process and preserve their vibrant color and texture. Allow the blanched vegetables to drain extremely well, removing as much excess water as possible.
- While the vegetables are draining, prepare the zesty Lemon Dill Vinaigrette. Add all of the vinaigrette ingredients – olive oil, fresh lemon juice, Dijon mustard, grated Parmigiano Reggiano, chopped fresh dill, honey, salt, and pepper – into a clean mason jar with a tight-fitting lid. Secure the lid tightly and shake vigorously for 30-60 seconds until all the ingredients are well combined and the vinaigrette appears emulsified. Taste the vinaigrette and adjust seasonings (salt, pepper, or honey) as needed to achieve your desired balance of flavors.
- Once the vegetables have drained completely, transfer them to a large mixing bowl. Gently fold in the roughly chopped fresh dill. Pour the prepared lemon dill vinaigrette evenly over the vegetables and dill. Using a large spoon or spatula, gently fold the ingredients together to ensure everything is thoroughly coated without bruising the delicate vegetables. Taste the salad and season with additional salt and pepper if desired. Finally, top the salad generously with the thin shavings of Parmigiano Reggiano cheese just before serving to maximize their fresh flavor and elegant appearance. Serve immediately and enjoy this delightful taste of spring!
