For the ginger cookies, I relied on a tried-and-true recipe for Soft Baked Ginger Cookies, known for their perfect balance of chewiness and spice. These cookies bake up tender and aromatic, providing the ideal foundation for our extraordinary filling. The secret to the buttercream’s irresistible flavor lies in the use of Amoretti Pumpkin Spice Cookie Spread. This premium spread is wonderfully sweet and creamy, infused with a vibrant kick of warm fall spices that truly elevate the buttercream. It’s incredibly flavorful and adds an unmatched depth to the frosting.

Tips for Crafting the Perfect Pumpkin Cookie Butter Ginger Sandwich Cookies

  • Room Temperature Ingredients are Key: For both the cookies and the buttercream, ensure your butter and egg are at room temperature. This allows for smoother mixing and results in a more uniform, tender cookie dough and a silkier buttercream.
  • Don’t Overmix the Cookie Dough: Once you add the dry ingredients to the wet, mix just until combined. Overmixing can develop too much gluten, leading to tough cookies.
  • Chill Time is Crucial: The four-hour (or overnight) chilling period for the cookie dough is not optional. It allows the flavors to meld, prevents the cookies from spreading too much in the oven, and makes the dough easier to handle.
  • Sifting Powdered Sugar: For the smoothest buttercream, always sift your powdered sugar. This removes any lumps and ensures a light, airy texture.
  • Achieving the Perfect Sandwich: Don’t be shy with the buttercream! A generous dollop (about 1/2 tablespoon) per cookie half ensures a satisfying filling. Gently press the top cookie down until the buttercream slightly peeks out around the edges for that classic sandwich cookie look.
  • Storage: Keep these delightful cookies in an airtight container at room temperature for up to three days. If you want them to last longer, they can be frozen for up to a month.
  • Spice Adjustment: Feel free to adjust the amount of ginger and other spices in the cookies to suit your preference. If you like a bolder, spicier kick, you can increase the ground ginger slightly.

These Pumpkin Cookie Butter Ginger Sandwich Cookies are not merely a recipe; they are an invitation to embrace the heartwarming spirit of the holidays. Whether you’re baking them for a festive gathering, as a thoughtful homemade gift, or simply to enjoy a cozy evening at home, they promise to bring a smile to every face. The combination of chewy, spicy ginger and creamy, spiced pumpkin is truly a match made in heaven, making these sandwich cookies a standout star in your holiday baking repertoire. Get ready to fill your home with irresistible aromas and your life with delicious moments.

Pumpkin Cookie Butter Ginger Sandwich Cookies

Soft, spicy ginger cookies filled with luscious pumpkin cookie butter buttercream, creating the ultimate fall and holiday treat.

Yield: 15 cookies

Total Time: 4 hours 12 minutes

Prep Time: 4 hours

Cook Time: 12 minutes

Ingredients:

Cookies

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 2 1/2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon allspice
  • 1 stick unsalted butter, at room-temperature
  • 3/4 cup brown sugar
  • 1/4 cup molasses
  • 1 egg, at room-temperature
  • 2 teaspoons vanilla extract

Buttercream Filling:

  • 1 stick unsalted butter, at room-temperature
  • 2 tablespoons pumpkin cookie spread (such as Amoretti)
  • 1 cup powdered sugar, sifted
  • 1/2 teaspoon vanilla extract

Directions:

For the Ginger Cookies:

  1. In a small bowl, whisk together the dry ingredients: flour, baking soda, kosher salt, ground ginger, cinnamon, cloves, and allspice. Set aside.
  2. In the bowl of a stand mixer fitted with the paddle attachment, cream the room-temperature unsalted butter and brown sugar until the mixture is pale in color and fluffy, typically about 3 minutes. Stop the mixer and scrape down the sides of the bowl to ensure even mixing.
  3. Add the molasses to the creamed mixture and mix until fully combined.
  4. Next, add the room-temperature egg and vanilla extract. Mix until they are fully incorporated, scraping down the sides of the bowl as needed to catch all ingredients.
  5. With the mixer on a low speed, gradually add the whisked dry ingredients to the wet mixture. Mix only until the dough just comes together and no streaks of flour remain. Be careful not to overmix the dough.
  6. Transfer the cookie dough to a separate bowl, cover it tightly with plastic wrap, and place it in the refrigerator to chill for a minimum of 4 hours, or ideally, overnight. This chilling process is essential for flavor development and prevents the cookies from spreading too much during baking.
  7. When ready to bake, preheat your oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper or a silicone baking mat.
  8. Shape the chilled dough into uniform 1-inch balls. Place these dough balls about 3 inches apart on the prepared baking sheet to allow for spreading.
  9. Bake for 10-12 minutes. It’s crucial not to overbake; the cookies should be soft and chewy.
  10. Allow the baked cookies to cool on the baking sheet for about 5 minutes before carefully transferring them to a wire rack to cool completely. They must be entirely cool before filling.

For the Pumpkin Cookie Butter Buttercream Filling:

  1. In the bowl of a stand mixer fitted with the paddle attachment (or using a handheld electric mixer), cream the room-temperature unsalted butter and pumpkin cookie spread together until the mixture is smooth and creamy.
  2. Turn the mixer down to low speed and gradually add the sifted powdered sugar, a little at a time, until it is all incorporated.
  3. Once all the powdered sugar has been added, increase the mixer speed to medium-high and beat for about 1 minute until the buttercream is light, smooth, and creamy. Scrape down the sides of the bowl occasionally.
  4. Add the vanilla extract and mix until it is just combined.

Assembling the Sandwich Cookies:

  1. Once the ginger cookies are completely cool, spread a generous amount of the pumpkin cookie butter buttercream filling onto the flat side of one cookie half, using approximately 1/2 tablespoon per cookie.
  2. Place another ginger cookie on top, gently pressing down until a small amount of the buttercream filling peeks out around the edges.
  3. Repeat with the remaining cookies and buttercream.
  4. Store the finished Pumpkin Cookie Butter Ginger Sandwich Cookies in an airtight container at room temperature for up to 3 days to maintain their freshness and soft texture.
