There’s something incredibly satisfying about a well-stuffed sweet potato. It transforms a simple root vegetable into a complete, balanced, and exciting meal. For too long, the humble sweet potato was overlooked as merely a side dish, but its potential as a versatile vessel for delicious fillings is truly limitless. Once you venture into the world of stuffed sweet potatoes, you’ll find yourself creatively pairing various proteins, vegetables, and dressings to create endless flavor combinations. This particular recipe stands out for its unique blend of sweet, savory, and tangy notes, offering a gourmet experience with surprising ease.

Our journey to culinary bliss begins with the foundation: perfectly baked sweet potatoes. The natural sweetness of the potato provides an ideal counterpoint to the savory fillings. Baking them until they are fork-tender ensures a creamy, melt-in-your-mouth texture that absorbs the flavors of the toppings beautifully. While your sweet potatoes are gently roasting in the oven, you’ll have ample time to prepare the star components that elevate this dish from good to unforgettable. This efficient multi-tasking approach makes it an ideal choice for a weeknight dinner when time is precious but you crave something extraordinary.

The secret to this recipe’s irresistible charm lies in its carefully chosen components. We’re talking about juicy grilled chicken, uniquely flavored with a poppy seed dressing glaze, and a vibrant kale salad enhanced by an ingenious warm bacon vinaigrette. To streamline the preparation process without sacrificing quality, we’ve integrated a fantastic convenience product: the Taylor Farms Sweet Kale Chopped Salad Kit. If you frequent your local Costco or supermarket, you’ve likely spotted this gem. It’s a true game-changer for busy cooks, offering a pre-washed and perfectly portioned blend of nutrient-rich greens and delightful toppings.

What makes the Taylor Farms Sweet Kale Chopped Salad Kit so exceptional? Each kit is thoughtfully assembled with a vibrant mix of fresh kale, crisp broccoli, tender Brussels sprouts, slightly bitter radicchio, sweet dried cranberries, and crunchy pumpkin seeds. But arguably the highlight of the kit is its sweet and creamy poppy seed dressing. This dressing is so delicious that it inspired a pivotal element of our recipe! The convenience of having these components ready to go saves precious time, eliminating the need for washing, spinning, and chopping individual ingredients. This means less mess and more time enjoying your meal, making it perfect for those moments when hunger strikes and you need a quick yet wholesome solution.

Crafting the Perfect Stuffed Sweet Potato: A Deconstructed Approach
Instead of merely tossing the salad, we’re deconstructing the kit to maximize its flavor potential. The star of the salad kit, the poppy seed dressing, is not just for greens in this recipe. We utilize its sweet and tangy profile to create an incredible glaze for our grilled chicken. During the final minutes of grilling, generously brush this dressing onto your chicken breasts. The heat caramelizes the dressing, infusing the chicken with an unbelievably juicy and flavorful crust that will have you craving more. This simple step elevates the grilled chicken, making it far from ordinary and perfectly complementing the other components of our stuffed sweet potato.

While the chicken rests, allowing its juices to redistribute for maximum tenderness, we turn our attention to the remaining components of the salad kit. This is where the magic of a warm bacon vinaigrette comes into play. Crispy bacon bits are rendered, infusing the pan with their rich, savory essence. This precious bacon fat then forms the base of our vinaigrette, combined with minced shallots, garlic, red wine vinegar, Dijon mustard, and a touch of maple syrup. The warmth of this vinaigrette is crucial; when poured over the crisp kale mixture, it gently wilts the greens, releasing their earthy flavors and creating a perfectly balanced texture that’s neither too crunchy nor too limp. It’s an absolute revelation!

Tips for Success and Customization
To ensure your stuffed sweet potatoes are nothing short of perfect, consider these tips:
- Sweet Potato Prep: For even faster cooking, you can microwave sweet potatoes for 5-10 minutes (depending on size) before baking, or even cook them entirely in the microwave if you’re really short on time. Just prick them with a fork several times first.
- Chicken Grilling: Don’t overcrowd your grill. Cook the chicken in batches if necessary to ensure good searing and even cooking. Pounding the chicken breasts to an even ½-inch thickness ensures they cook through quickly and uniformly.
- Bacon Vinaigrette: Adjust the amount of red wine vinegar and maple syrup to your taste. For an extra kick, a pinch of red pepper flakes can be added to the vinaigrette.
- Meal Prep: You can bake the sweet potatoes, grill the chicken, and prepare the bacon vinaigrette ahead of time. Store components separately and assemble just before serving for a quick and fresh meal.

Ingredients
Warm Bacon Vinaigrette
- 4 slices bacon, cut into 1-inch pieces
- 1 small shallot, about 2 tablespoons, minced
- 1 clove garlic, minced
- 4 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon maple syrup
- 2 tablespoons extra-virgin olive oil
- Kosher salt and pepper
Stuffed Sweet Potatoes
- 4 large sweet potatoes
- 2 chicken breasts, pounded to ½-inch thick
- 1 12-ounce Taylor Farms Sweet Kale Chopped Salad Kit
- 2 scallions, chopped
Instructions
-
Preheat oven to 350 degrees F. Place the sweet potatoes on a sheet pan. Bake for 45 minutes, or until fork tender.
-
While the potatoes bake, preheat an indoor or outdoor grill. Season the chicken breasts with kosher salt and pepper. Grill for 5-7 minutes on each side, or until cooked through. During the last few minutes of grilling, liberally brush on the poppy seed dressing that is included in the salad kit. Allow the chicken to rest for 5-10 minutes before chopping into bite-size chunks.
-
While the chicken is resting, add the bacon to a small skillet over medium heat. Allow the bacon to cook, stirring often, until crispy. Transfer to a paper towel-lined plate; set aside. Discard the bacon fat from the pan, reserving 1 ½ tablespoons. Turn the heat down to medium low. Add the shallot to the pan with the reserved bacon fat and cook for 2 minutes, stirring often. Add the garlic to the pan and cook for 1-2 minutes, stirring often to prevent burning. Add the red wine vinegar to the pan. Remove the pan from the heat and add the remaining vinaigrette ingredients, whisking vigorously to combine. Season with salt and pepper to taste. Finely chop the cooked bacon. Stir half of the bacon into the vinaigrette mixture. Set aside to cool slightly.
-
Add the remaining salad kit contents to a large bowl. Pour the warm bacon vinaigrette over the salad and toss to combine. Season the salad with salt and pepper to taste.
-
To assemble the stuffed sweet potatoes, slice the sweet potatoes lengthwise down the center. Using a fork, fluff the inside of the potato and season each with kosher salt and pepper. Divide the chopped chicken between the four sweet potatoes. Top each sweet potato with a generous amount of kale salad. Sprinkle with remaining chopped bacon. Serve immediately.
