1 cup diced seedless cucumber

1/2 cup diced red, yellow, or orange bell peppers

1 (8-ounce) package fresh mozzarella pearls (or cut into small chunks)

1/2 cup fresh basil, gently torn into pieces

Vinaigrette:

1/2 cup red wine vinegar

1/2 tablespoon fresh lemon juice

1 teaspoon dijon mustard

1 clove garlic, minced (or 1 teaspoon garlic paste)

1 tablespoon honey

1/4 teaspoon kosher salt

1/4 teaspoon black pepper, freshly ground

1/2 cup extra-virgin olive oil
