Delicious Shrimp Banh Mi Flatbread Pizza for game day

Super Bowl Sunday: More Than Just Football, It’s a Feast!

For many, Super Bowl Sunday isn’t just about touchdowns and tackles; it’s a cherished annual tradition centered around an incredible smorgasbord of delicious food. While the game unfolds on screen, a secondary, equally important event takes place in living rooms and kitchens across the nation: a culinary celebration. Friends and family gather, not just for the camaraderie and the thrill of the sport, but for the shared joy of an elaborate spread of finger foods, hearty casseroles, and slow-cooker wonders. It’s a magical time where the scent of savory snacks fills the air, and every bite is a moment of pure enjoyment.

Even if you’re not a die-hard football enthusiast, you’re likely a food enthusiast, and where there’s football, there’s almost always an impressive food table. And for that, you can always count us in! The allure of diverse flavors and easy-to-eat bites makes game day a perfect excuse to indulge and explore new culinary horizons. This year, break away from the predictable and introduce a show-stopping dish that combines exotic flair with familiar comfort: our Shrimp Banh Mi Flatbread Pizza.

Reimagining Game Day Classics: From Staples to Standouts

Every year, the call goes out for the beloved game day staples. For our gatherings, that often means classics like spicy stuffed jalapeños, hearty Game Day Loaded Nachos, sweet and savory Apple Cider Glazed Meatballs, and flavorful Chipotle Pork Sliders with Honey Lime Slaw. These tried-and-true recipes are non-negotiable; they are the comforting foundation of our game day feast, satisfying the cravings that have become synonymous with the big game. Deviating from these traditions can lead to dramatic pleas from “grown adult babies” who cherish their favorites.

However, alongside these revered classics, there’s always room for a delightful new addition. My personal game day strategy involves artfully sneaking in an innovative dish each year, ensuring it’s surrounded by the familiar favorites to maintain harmony among guests. This year, that triumphant new dish is the Shrimp Banh Mi Flatbread Pizza. It’s not just a twist on the traditional banh mi sandwich; it’s a brilliant evolution. In my humble opinion, this flatbread pizza generously topped with an abundance of freshly grated mozzarella cheese, far surpasses its classic sandwich counterpart. The irresistible pull of melty cheese makes everything better!

The Beauty of “Emeralds in the Rough” Avocados

This exquisite flatbread pizza is generously loaded with ripe Mission Emeralds in the Rough Avocados. While classic guacamole is always a delicious option, and a staple we’ve certainly enjoyed many times, this recipe offers a far more creative and engaging use for these perfectly imperfect avocados. Mission’s Emeralds in the Rough Avocados may not win a beauty contest with their sometimes-blemished exteriors, but their inner quality and rich, creamy flavor are absolutely second to none. After all, it’s what’s on the inside that truly counts, right?

By the time you cut them open, gently dice them, or lovingly smash them, no one will ever know the difference between these “rough” avocados and their seemingly flawless counterparts. They provide the same luscious texture and rich taste that elevates any dish, and they are an integral component in balancing the vibrant flavors of our Banh Mi Flatbread Pizza. Choosing these avocados also highlights a commitment to reducing food waste and appreciating natural produce in all its forms.

Simplifying Perfection: The Magic of Flatbreads

One of the many charms of this Shrimp Banh Mi Flatbread Pizza is its sheer simplicity, particularly when it comes to the base. There’s no need to fuss with making and rolling out homemade pizza dough. Instead, a trip to your local grocery store for your favorite pre-made flatbread is all it takes. For this recipe, naan bread was the perfect choice, being readily available in the freezer and offering a delightful soft, chewy texture that complements the toppings beautifully. Other options like pita bread, lavash, or even pre-baked pizza crusts can also work wonderfully, allowing for customization based on your preference and what’s easily accessible. This shortcut saves considerable time and effort, making it ideal for busy game day preparations without compromising on taste or quality.

Effortless Game Day Prep: Maximize Fun, Minimize Stress

While this Shrimp Banh Mi Flatbread Pizza recipe involves a few distinct steps, none are particularly difficult or overly time-consuming. The real genius lies in the ability to complete most of the prep work in advance, ensuring that game day itself is an absolute breeze. Imagine having your pickled banh mi veggies ready and waiting, and your peanut dressing perfectly mixed and chilled. This allows you to spend less time in the kitchen and more quality time socializing with friends and family, whether you’re actively watching the game or, more likely, simply enjoying the fantastic food and company. The goal is to create an experience where delicious food enhances the celebration, rather than becoming a source of stress.

Every bite of this flatbread pizza is a testament to flavor harmony. The irresistible melty cheese forms a comforting base, topped with savory, buttery shrimp that adds a delightful oceanic touch. The crisp, tangy pickled banh mi vegetables – a blend of radishes, carrots, and cucumbers – provide that signature zesty crunch, perfectly contrasting with the creamy Mission Emeralds in the Rough avocados. Fresh cilantro introduces a burst of herbaceous freshness, while thinly sliced spicy jalapeños offer a kick of heat. Finally, a generous drizzle of the homemade peanut dressing ties all these incredible elements together, creating a symphony of sweet, savory, tangy, and spicy notes that will leave everyone craving more. This isn’t just a snack; it’s a full-on flavor party!

Ingredients

Flatbread Pizza:

  • 2 10-inch flatbreads
  • 2 cups shredded Mozzarella cheese
  • 2 jalapeños, thinly sliced
  • 2 Mission Emeralds in the Rough Avocados, diced
  • ¼ cup freshly chopped cilantro
  • 12 ounces cooked shrimp, peeled and deveined

Banh Mi Vegetables:

  • 1 cup thinly sliced radishes
  • 1 cup thinly sliced carrots
  • 1 cup thinly sliced Persian cucumbers
  • ¼ cup rice vinegar
  • ¼ cup granulated sugar
  • 1 teaspoon kosher salt

Peanut Dressing:

  • ¼ cup peanut butter
  • 1 tablespoon sesame oil
  • 2 tablespoons avocado oil
  • 1 tablespoon soy sauce
  • 3 tablespoons rice vinegar
  • 2 tablespoons honey
  • Juice of 1 large lime
  • 1 clove garlic, roughly chopped
  • 1 heaping teaspoon ginger paste
  • 1 tablespoon Sriracha
  • Salt and pepper

Instructions

  1. To make the banh mi veggies, add vinegar, sugar, and salt to a small saucepan. Cook over medium heat, stirring occasionally, just until the sugar and salt dissolve. Remove from the heat and allow to cool to room temperature. While the mixture is cooling, prep the veggies (radishes, carrots, cucumbers) and add them to a large mason jar. Pour the warm vinegar mixture over the top. Screw on the lid and give the mixture a shake to coat all of the veggies. Place in the refrigerator for at least 30 minutes, but preferably overnight for best flavor. Drain the veggies before adding them to the pizza. The pickled veggies will stay fresh in the fridge for up to 2 weeks.
  2. To make the peanut dressing, add all of the ingredients (peanut butter, sesame oil, avocado oil, soy sauce, rice vinegar, honey, lime juice, garlic, ginger paste, Sriracha) to the bowl of a food processor or blender. Pulse until smooth and creamy. Season with salt and pepper to taste. Transfer to an airtight container and refrigerate until ready to use. This delicious dressing will stay fresh in the fridge for 7-10 days.
  3. Preheat your oven to 375 degrees F (190 degrees C). Place the flatbread pieces on a baking sheet. Evenly top each flatbread with 1 cup of shredded Mozzarella cheese. Bake for 5 minutes, allowing the cheese to begin melting and the flatbread to warm through. Remove from the oven and evenly distribute the cooked shrimp over each flatbread. Return to the oven and continue to bake until the cheese is fully melted, bubbly, and the shrimp are warmed through, approximately another 5 minutes.
  4. Once the flatbreads are out of the oven, immediately top them with the thinly sliced jalapeños, diced avocados, drained banh mi pickled veggies, and fresh cilantro. Finish by generously drizzling each pizza with the prepared peanut dressing. Slice into wedges and serve immediately while warm for the best flavor and texture. Enjoy your unique and delicious Shrimp Banh Mi Flatbread Pizza!
