Caramel Apple Cheesecake Bars - Delicious Autumn Dessert

While pumpkin certainly holds a cherished spot in our autumn repertoire, as evidenced by delightful treats like Pumpkin Spice Snickerdoodles, Pumpkin Cheesecake Swirl Brownies, and Pumpkin Spice Donuts, it’s time to broaden our seasonal horizons. The crisp air and vibrant foliage of fall herald the arrival of another star ingredient: apples!

Apples are the unsung heroes of autumn, offering a crisp sweetness and versatile texture that makes them perfect for both sweet and savory applications. In these Caramel Apple Cheesecake Bars, they truly shine, bringing a refreshing zest that perfectly complements the creamy cheesecake and rich caramel. It’s a flavor combination that evokes cozy evenings and harvest celebrations, inviting you to savor the season in the most delicious way possible.

Unlocking the Magic of Caramel Bits

One of the secrets to the effortless caramel goodness in this recipe lies in Kraft Caramel Bits. These ingenious little morsels offer all the rich, buttery flavor of classic caramel squares, but with none of the tedious unwrapping. More importantly, they melt into a perfectly gooey, smooth layer of caramel, distributing their sweet indulgence evenly throughout the bars. This ensures that every bite is imbued with that irresistible caramel essence, making these bars truly addictive. Say goodbye to sticky fingers from unwrapping individual candies and hello to pure, unadulterated caramel bliss!

The Elevated Crust: A Touch of Walnut Flour

This recipe builds upon the success of my beloved Butterscotch Apple Crumb Bars, maintaining a similar, wonderfully buttery shortbread-like crust. However, for an added layer of flavor and sophistication, I’ve swapped out pecan flour for toasted walnut flour. Don’t let the idea of making your own walnut flour intimidate you; it’s surprisingly simple and incredibly rewarding. Toasted walnuts lend a subtle, earthy depth and a delightful nutty aroma to the crust, enhancing the overall flavor profile of these bars. It’s a small change that makes a significant difference, elevating the base from good to extraordinary.

Making Your Own Walnut Flour

Creating your own walnut flour is not only straightforward but also far more cost-effective than purchasing specialty flours. Here’s how you do it: simply spread shelled walnuts on a baking sheet and toast them in a preheated oven at 350°F (175°C) for about 5-7 minutes, or until fragrant. Watch them closely to prevent burning. Once toasted, let them cool completely. This step is crucial, as warm walnuts can release their oils too quickly and turn into butter when processed. Once cooled, pulse them in a food processor or high-speed blender until they resemble fine, sandy crumbs. Be careful not to over-process, or you’ll end up with walnut butter instead of flour. This fresh, homemade walnut flour adds a depth of flavor that store-bought versions often lack, truly enhancing the shortbread crust.

Expert Baking Tips for Flawless Cheesecake Bars

Achieving perfectly structured and delicious cheesecake bars requires a few key steps and a touch of patience. Follow these tips for the best results:

  • Preheating is Key: Ensure your oven is fully preheated to 350°F (175°C) before you even begin mixing. A consistent oven temperature is vital for even baking and proper setting of the cheesecake layer.
  • Parchment Paper is Your Best Friend: This is a non-negotiable step. Always line your baking pan with parchment paper, leaving an overhang on the sides. This creates “handles” that allow you to easily lift the entire cooled block of bars out of the pan. Skipping this step, as I once did, can lead to a crumbly mess and difficulty in removal, making clean cuts almost impossible. It’s a simple trick that saves a lot of frustration.
  • The Art of Cooling: Patience is paramount! After baking, it’s essential to allow the bars to cool completely in the pan before attempting to slice them. If you try to cut them while warm, the cheesecake layer will not be fully set, and the bars will likely crumble and fall apart. For those in a hurry, you can speed up the cooling process by transferring the pan to the refrigerator once it has cooled to room temperature. A fully chilled bar yields clean, neat slices and a firmer texture.
  • Room Temperature Ingredients: For the cheesecake layer, ensure your cream cheese and egg are at room temperature. This allows them to incorporate smoothly, creating a uniform, lump-free cheesecake batter that bakes evenly and achieves that signature creamy texture.

Caramel Apple Cheesecake Bars

Indulge in these easy-to-make Caramel Apple Cheesecake Bars, featuring a buttery walnut shortbread crust, creamy cheesecake, sweet apples, and luscious caramel bits. The perfect fall dessert!

Yield: 1 (8-inch-by-8-inch) pan

Total Time: 50 minutes

Prep Time: 10 minutes

Cook Time: 40 minutes

Ingredients:

Bars

  • 1 and 1/2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 cup old-fashioned oats
  • 1/2 cup walnut flour (see note above for homemade)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 3/4 cup unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 2 apples, peeled, cored, and chopped into 1/2-inch pieces (Honeycrisp, Fuji, or Granny Smith work well)
  • 1 cup caramel bits (like Kraft Caramel Bits)

Cheesecake Filling

  • 1 (8-ounce) package cream cheese, softened to room temperature
  • 1/3 cup granulated sugar
  • 1 large egg, at room-temperature
  • 1 teaspoon vanilla extract

Directions:

  1. Preheat oven to 350 degrees F (175°C). Line an 8-inch-by-8-inch (20×20 cm) square baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. Prepare the Crust: In a large bowl, combine the all-purpose flour, brown sugar, oats, walnut flour, cinnamon, and kosher salt. Stir well to combine all dry ingredients. Pour in the melted butter and vanilla extract, stirring until the mixture resembles coarse, moist crumbs. Press a little more than half of this crumb mixture evenly into the bottom of your prepared pan to form the crust. Reserve the remaining crumb mixture for the topping.
  3. Make the Cheesecake Filling: In the bowl of a stand mixer fitted with the paddle attachment (or using a hand mixer), add the softened cream cheese and granulated sugar. Beat on medium speed until the mixture is smooth and creamy, about 1 minute, scraping down the sides of the bowl as needed. Beat in the room-temperature egg and vanilla extract until just combined and smooth. Be careful not to overmix after adding the egg.
  4. Assemble the Bars: Evenly spread the cheesecake mixture over the pressed shortbread crust in the pan. Distribute the chopped apples evenly over the cheesecake layer. Sprinkle the caramel bits over the apples. Finally, scatter the remaining oat crumb mixture evenly over the top of the apples and caramel.
  5. Bake: Bake for 35-40 minutes, or until the crust is golden brown around the edges, the apples are tender, and the cheesecake filling is mostly set (it may still have a slight jiggle in the center).
  6. Cool and Serve: Allow the bars to cool completely in the pan on a wire rack. This is crucial for the cheesecake to fully set and for clean slices. If you’re in a hurry, transfer the pan to the refrigerator once it has cooled to room temperature, chilling for at least 2 hours. Once thoroughly cooled, use the parchment paper overhang to lift the entire block of bars out of the pan. Place on a cutting board and cut into squares.
  7. Storage: Store the cooled and cut squares in an airtight container in the refrigerator for up to 7 days. Enjoy!
