It feels like each year brings more scheduled game days, cementing football as the undisputed king of our weekend agenda.

When I say the world stops spinning, I’m not exaggerating. Every focus shifts to that enormous television screen, meticulously calibrated for optimal football viewing pleasure. Distractions are minimized, and concentration reigns supreme. It’s not about me, nor the dog, nor even the cat – it’s all about the game.

Well, I might be slightly stretching the truth. There’s one other thing that matters immensely: the food. Squirrel begins his meticulous planning for each football menu an entire week in advance. This isn’t a casual endeavor; it involves rigorous research, careful weighing of countless options, and the creation of a comprehensive grocery list. That list is then proudly presented to me, accompanied by an expectant gaze filled with anticipation and pure football joy.

And let me tell you, a single appetizer simply won’t suffice. Oh no, dear friends, a true football gathering demands an entire table overflowing with culinary delights. A grand variety, a lavish buffet, a smorgasbord of epic proportions is the standard.   • Jennie (that’s me!) rises early, often before the sun, to embark on the demanding appetizer-making process. Meanwhile, Squirrel enjoys a well-deserved lie-in. Apparently, the strenuous activity of watching football and consuming a feast requires an immense amount of stored stamina and energy. Psht!
  • My next crucial task involves clearing and meticulously preparing the “buffet” table—otherwise known as our coffee table—in the dedicated football-viewing zone of the basement. Then, I plug in our magnificent football tree. Yes, we proudly own a towering 7-foot purple tree, adorned with hundreds of twinkling purple lights, radiating team spirit!
  • With the food prepped and the viewing area set, I then make multiple trips down the stairs, carefully transporting each dish to assemble the much-anticipated smorgasbord. It’s a logistical challenge, but one I embrace for the love of the game (and my husband).
  • As I arrange the spread, Squirrel assumes his rightful command of the remote control, simultaneously fixing his first (of many) plates. Multitasking at its finest, or so he claims.
  • Finally, I typically retreat back upstairs. This isn’t because I don’t love football, but rather because of the infamous “no talking during the game” rule. You see, I am simply not equipped for prolonged silence; my nature demands interaction. Therefore, I must politely excuse myself from the situation entirely to avoid breaking the cardinal rule.

The “no talking rule” is absolutely, unequivocally real. I genuinely wish I were exaggerating for comedic effect, but alas, it’s a solemn truth. I could metaphorically be drowning in the bathtub, and my urgent rescue mission would most certainly have to wait until a commercial break. That’s the level of commitment we’re talking about here.

Today, I’ve brought you one of Squirrel’s absolute favorite appetizers, a dish that consistently disappears with impressive speed. Even my dad is known to devour an entire tray of these without hesitation. When I first envisioned creating this particular recipe, I admit, I had the ladies in mind: elegant, dainty pieces of toasted bread, delicately spread with creamy homemade ricotta, and topped with a vibrant mound of fresh, ripe tomatoes. It seemed like the quintessential “lady food.”

What unfolded, however, was entirely unexpected. As soon as the tray hit the table, all the men in attendance swarmed, quickly hoarding every single one of these supposedly “dainty” toasts. They were an instant hit, transcending gender roles and proving to be universally adored. So, these delicious bites have now been officially rebranded as “co-foodie toasts,” cherished by everyone.

But if you’re a homemade ricotta virgin, I implore you: make it, experience it, and feel no shame in selfishly devouring the entire bowl yourself. It’s an indulgence you truly deserve.

Homemade ricotta transcends anything you’ll find pre-packaged at the grocery store. Its texture is remarkably smooth, incredibly fluffy, and silken to the touch, resulting in an absolutely divine creaminess that store-bought versions simply cannot replicate. And here’s the best part: I promise you, it’s astonishingly easy to make. You don’t need fancy equipment or advanced culinary skills to achieve this gourmet delight.

The most specialized tool you’ll need is an inexpensive thermometer that clips onto the side of your pot (they typically cost around $10). Prep Time: 1 hour

Cook Time: 10 minutes

Ingredients:

For the Silky Homemade Ricotta:

  • 3 cups whole milk (essential for rich creaminess)
  • 1 cup heavy cream
  • ¾ teaspoon kosher salt
  • 3 tablespoons fresh lemon juice (for curdling the milk)

For Assembling the Flavorful Toasts:

  • 1 fresh baguette of French bread, sliced
  • 1 recipe of the homemade ricotta cheese (prepared as above)
  • 1 pint grape tomatoes, halved or quartered for ease of eating

  • Flaky sea salt and freshly ground black pepper, to taste

Directions:

Crafting the Perfect Homemade Ricotta:

  1. Combine the whole milk, heavy cream, and kosher salt in a large, heavy-bottomed pot. Attach a candy or deep-fry thermometer securely to the side of the pot. Cook the mixture over medium heat, stirring occasionally to prevent scorching, until it reaches an exact temperature of 190 degrees F.
  2. Once the temperature is reached, immediately remove the pot from the heat. Gently, yet thoroughly, stir in the fresh lemon juice. Allow the mixture to sit undisturbed for precisely 5 minutes; during this time, the curds will begin to separate beautifully.
  3. Prepare your straining station: Line a fine-mesh strainer with several layers of clean cheesecloth or a very thin, clean tea towel. Place this lined strainer over a deep bowl to catch the whey.
  4. Carefully pour the curdled milk mixture through the prepared colander. Allow the curds to drain for a minimum of 1 hour to achieve a creamy texture. For a firmer ricotta, ideal for spreading or piping, extend the straining time to 2 hours. Discard the clear liquid (whey).
  5. Your fresh ricotta is now ready! Serve it immediately for the freshest taste, or transfer it to an airtight container and refrigerate until you are ready to assemble your toasts. It will keep well for several days.

Assembling the Irresistible Ricotta Toasts:

  1. Preheat your oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper to prevent sticking.
  2. Slice the French baguette into ½-inch thick rounds. Arrange these slices in a single layer on the parchment-lined baking sheet. Bake for 5 minutes, or until lightly golden and crisp. Allow the toasts to cool slightly on the baking sheet before handling.
