A Deep Dive into the Healthy Elements of This Powerhouse Salad

Every component of this Grilled Vegetable Quinoa Salad has been thoughtfully selected to contribute to your overall well-being. It’s more than just a tasty dish; it’s a symphony of nutrient-dense ingredients working together to nourish your body and soul. Let’s explore the remarkable benefits packed into each serving:

  • Fiber-Rich Quinoa: This ancient grain is a true superfood, trending for all the right reasons. As one of our favorite gluten-free whole grains, quinoa delivers an impressive 8 grams of protein per cup, making it a complete protein source vital for muscle repair and satiety. Beyond protein and fiber, quinoa is an excellent source of essential minerals such as magnesium, phosphorus, manganese, zinc, iron, and B vitamins like thiamine and folate. Its robust nutritional profile supports energy production, bone health, and overall metabolic function.
  • Peppery Arugula: Known for its delicate crunch and distinctive peppery flavor, arugula is far more than just a leafy green. It’s loaded with folic acid, powerful antioxidants, and carotenoids, which are crucial for maintaining healthy vision and supporting immune function. Moreover, arugula contains phytochemicals, compounds celebrated for their potential role in cancer prevention. Incorporating this vibrant green into your diet adds a significant boost of health benefits.
  • Creamy Cannellini Beans: These versatile white beans are a fantastic addition, providing a substantial punch of dietary fiber, which aids digestion and helps regulate blood sugar levels. They are also a healthy source of plant-based protein, making them an excellent choice for vegetarians and vegans. Furthermore, cannellini beans offer a plethora of B vitamins, crucial for energy metabolism, along with vital minerals like iron, potassium, and zinc, all contributing to healthy blood pressure and immune support.
  • Grilled Seasonal Vegetables: The star of this salad, grilled vegetables, offer a bounty of key vitamins, minerals, and antioxidants. The grilling process enhances their natural flavors while retaining their nutritional integrity. From the vibrant reds of bell peppers to the earthy notes of mushrooms and the crispness of asparagus, each vegetable contributes unique health benefits, supporting everything from immune health to cellular protection.

With such a potent combination of ingredients, it’s clear that this Grilled Vegetable Quinoa Salad is exceptionally beneficial for both your body and your spirit, making healthy eating both easy and enjoyable.

Customizable Grilled Vegetable Quinoa Salad

Customization: Your Salad, Your Rules

One of the most delightful aspects of this salad is its incredible adaptability. While we love topping this salad with a generous handful of crumbled Feta cheese for its tangy, salty kick, the choice is entirely yours. You could easily opt for fresh mozzarella for a milder, creamier texture, or even crumbled blue cheese for a more pungent flavor profile. For those who prefer to keep the dish vegan or dairy-free, simply omit the cheese altogether without compromising on flavor or satisfaction.

The beauty extends to your choice of vegetables too! This recipe is incredibly forgiving and perfect for utilizing whatever seasonal produce you have on hand, or even those almost-forgotten vegetables lingering in your fridge. Think of it as a delicious way to “clear out” your vegetable crisper. Any almost-ready-to-go vegetable can be chopped, quickly grilled, and then tossed in with the cooked quinoa. Zucchini, bell peppers, asparagus, onions, mushrooms, eggplant – the possibilities are endless. This flexibility ensures that your salad is always fresh, seasonal, and tailored to your personal preferences and pantry availability.

Grilled Vegetable Quinoa Salad with Basil Balsamic Vinaigrette

Yield: 6 servings

Cook Time: 15 mins

Prep Time: 15 mins

Total Time: 30 mins

Ingredients

Salad

  • 2 tablespoons olive oil, divided
  • 1 cup uncooked quinoa
  • 2 cups water
  • ½ teaspoon kosher salt, plus more for seasoning
  • 4 cups chopped seasonal vegetables*
  • 1 15.4-ounce can cannellini beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • ¼ cup thinly sliced red onion
  • ½ cup crumbled Feta cheese*
  • 2 cups arugula
  • ½ cup chopped basil

Basil Balsamic Vinaigrette

  • 1 clove garlic, roughly chopped
  • ¼ cup balsamic vinegar
  • 1 teaspoon dijon mustard
  • ½ teaspoon honey or maple syrup
  • ¼ cup basil leaves
  • ½ cup extra-virgin olive oil
  • Kosher salt and pepper, to taste

Instructions

  1. Heat 1 tablespoon olive oil in a saucepan over medium heat. Add the quinoa; stir to coat in the olive oil. Cook the quinoa, stirring often, until toasted and nutty, about 3-4 minutes. Add the water and ½ teaspoon salt to the pot and bring to a boil. Once boiling, reduce heat to low and cover the pot. Continue to cook until the quinoa has absorbed all of the liquid, about 15-25 minutes. Remove from heat and allow the quinoa to rest in the covered pot for 5 minutes. Transfer the cooked quinoa to a large bowl and allow it to cool to room temperature.
  2. While the quinoa cools, preheat your grill or grill pan to medium-high heat. Add the chopped vegetables to a grill pan or directly onto the grill grates if using a grill-safe basket. Drizzle with the remaining 1 tablespoon of olive oil. Refrain from seasoning with salt and pepper until the end. Grill the vegetables, stirring or flipping often, until they are tender-crisp and show nice char marks, about 7-10 minutes. Remove from the grill and season with salt and pepper to taste.
  3. To make the vinaigrette, combine the roughly chopped garlic, balsamic vinegar, dijon mustard, and honey or maple syrup in a food processor or blender. Pulse until the mixture is smooth. With the food processor running on low, slowly stream in the extra-virgin olive oil until the vinaigrette is emulsified and well combined. Add the fresh basil leaves and pulse a few more times until the basil is just incorporated, creating a vibrant green dressing. Season with kosher salt and pepper to taste.
  4. To assemble the salad, add the cooled quinoa, grilled vegetables, drained and rinsed cannellini beans, halved cherry tomatoes, and thinly sliced red onion to a large mixing bowl. Add the crumbled Feta cheese (if using) and toss gently to combine all the ingredients. Season with additional salt and pepper to taste, if needed.
  5. If serving immediately, arrange the fresh arugula in an even layer on a large platter or in individual serving bowls. Spoon the quinoa mixture generously over the arugula. Sprinkle with more Feta cheese, if desired, and garnish with extra chopped basil for a burst of freshness. Drizzle generously with the Basil Balsamic Vinaigrette and serve.
  6. For meal prepping or grab-and-go lunches, add the vinaigrette to the bottom of an airtight container or mason jar. Layer with the arugula, then top with about 1 heaping cup of the quinoa mixture. Secure the lid and store in the refrigerator for up to 3-4 days. When ready to serve, simply shake the jar or transfer the contents to a bowl and toss.

Notes

  1. Vegetable Choices: Feel free to experiment with your favorite seasonal vegetables. Excellent choices include zucchini, yellow squash, asparagus, red bell pepper, cremini mushrooms, red onion, and even broccoli florets or snap peas.
  2. Cheese Options: If Feta isn’t your preference, crumbled goat cheese or fresh mozzarella balls (halved or quartered) are also delicious additions. For a completely dairy-free and vegan dish, simply omit the cheese entirely, and ensure your maple syrup is vegan.
  3. Quinoa Cooking Tip: For perfectly fluffy quinoa, ensure you rinse it thoroughly before cooking to remove saponins, which can impart a bitter taste. Also, resist the urge to lift the lid during cooking, and allow it to rest off the heat for a few minutes to steam through.
  4. Vinaigrette Storage: The Basil Balsamic Vinaigrette can be made ahead and stored in an airtight container in the refrigerator for up to a week. If the oil separates, simply give it a good shake or a quick whisk before serving.
