Today, we’re embracing this philosophy of expressing care through heartfelt creation. My wonderful friends, Kim from Cravings of a Lunatic and Jen from Juanita’s Cocina, extended an invitation for me to join them in a crucial initiative: raising support and awareness for cancer and hospice care. This invaluable service transforms a period of immense sorrow into one of shared solace and support, making an unimaginable situation a little more manageable.

A Personal Tribute: Remembering Uncle Gene Through Food

Just last year, our family suffered an immense loss to lung cancer. My Uncle Gene, a truly special individual, was taken from this world. Cinnamon Chip Cookie Butter Oat Bars

Inspired by A Kitchen Addiction, these gooey, cinnamon-spiced cookie butter oat bars are a perfect way to show you care.
Ingredients
  • 2 sticks unsalted butter, at room-temperature
  • 1 cup cookie butter, such as Biscoff or Speculoos
  • 2/3 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 tsp. vanilla extract
  • 2 cups all-purpose flour
  • 2 cups old-fashioned oats
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • 1 1/2 cups cinnamon chips
Instructions
  1. Preheat oven to 350°F (175°C). Line a 9 by 13-inch baking pan with a piece of parchment paper, ensuring the parchment hangs over the two longest sides of the pan to create handles. Lightly spray the parchment with cooking spray.
  2. In a medium bowl, whisk together the all-purpose flour, old-fashioned oats, baking soda, and kosher salt. Set this dry mixture aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment, cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy. Add the cookie butter and vanilla extract, mixing until just combined. Scrape down the sides of the bowl as needed to ensure all ingredients are well incorporated. Add the eggs one at a time, mixing well after each addition until fully blended.
  4. Gradually add the reserved flour mixture to the wet ingredients, mixing on low speed until just incorporated and no streaks of dry ingredients remain. Be careful not to overmix. Finally, gently stir in the cinnamon chips until evenly distributed throughout the dough.
  5. Press the dough evenly into the bottom of your prepared baking dish. Bake for 30-35 minutes, or until the edges are just starting to turn golden brown and a toothpick inserted into the center comes out with moist crumbs attached.
  6. Remove the pan from the oven and place it on a wire rack to cool completely. Once cooled, use the parchment paper overhangs to carefully lift the bars from the pan and transfer them to a cutting board. Cut into desired squares or bars. Store in an airtight container at room temperature for up to 7 days to maintain freshness.
