  • ¼ cup teff flour
  • 1 teaspoon baking powder
  • 2 7-ounce milk chocolate bars
  • 1 7-ounce container marshmallow fluff

Instructions

  1. Preheat oven to 350 degrees F. Line an 8-inch-by-8-inch square baking pan with parchment paper, ensuring it overlaps on all sides for easy removal.
  2. In a stand mixer fitted with a paddle attachment (or in a large bowl using a handheld mixer), beat together the unsalted butter, creamy peanut butter, granulated sugar, and brown sugar until the mixture becomes light and fluffy, which typically takes about 1 minute. Stop the mixer, scrape down the sides of the bowl, then add the large egg (at room temperature) and vanilla extract. Continue to beat until all ingredients are well combined.
  3. Gradually add the gluten-free all-purpose flour, teff flour, and baking powder to the wet ingredients. Beat until the dry ingredients are just combined with the wet mixture, scraping down the sides of the bowl as needed to ensure everything is incorporated without overmixing.
  4. Press approximately two-thirds of the prepared batter evenly into the bottom of the lined baking pan. Create an even layer of the milk chocolate bars on top of this batter, breaking them into pieces if necessary to cover the surface. Gently press down on the chocolate to ensure it adheres to the batter. Next, spread the marshmallow fluff evenly over the chocolate layer. Finally, crumble the remaining one-third of the batter evenly over the marshmallow cream.
  5. Bake in the preheated oven for 25-30 minutes, or until the top layer is beautifully golden brown. Once baked, allow the bars to cool completely in the pan before carefully lifting them out using the parchment paper overhang and cutting them into squares. This ensures they set properly and are easy to slice.

  1. For the best texture and structure in your gluten-free bars, choose a high-quality gluten-free all-purpose flour mixture that already contains xanthan gum. I highly recommend Bob’s Red Mill 1-to-1 Baking Flour for its reliable results.
  2. If you don’t have milk chocolate bars readily available, you can easily substitute with 8 ounces of milk chocolate chips or chunks. When using chips or chunks, make sure to gently press them into the batter layer. This small step helps prevent them from floating up when you spread the marshmallow fluff on top, ensuring an even and delicious distribution in every bite.
  3. Always ensure your butter and egg are at room temperature. This helps them emulsify properly with the other ingredients, leading to a smoother batter and a more tender, consistent baked product.
  4. Proper cooling is essential for these bars. While it’s tempting to cut into them warm, letting them cool completely allows the chocolate and marshmallow layers to set, making for clean slices and a more enjoyable eating experience.
