  • 4 large slices roasted red pepper (from a jar, patted dry)
  • 12 fresh basil leaves
  • 8 thick slices mozzarella cheese

Directions:

  1. In a medium bowl, whisk together the red wine vinegar, lemon juice, olive oil, minced garlic, and a generous pinch of salt and pepper. Add the chicken breasts to the bowl, ensuring each side is thoroughly coated with the marinade. Cover the bowl and refrigerate for a minimum of 1 hour, or for up to 12 hours for maximum flavor.
  2. Preheat your oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper for easy cleanup. Remove the marinated chicken from the bowl and place it onto the prepared baking sheet. Cook just long enough for the mozzarella to melt completely and become lightly browned and bubbly, approximately 1-2 minutes. This step requires constant vigilance; cheese can quickly go from perfectly melted to scorched, so do not leave the broiler unattended.
