Creamy Portobello Mushroom Risotto with Cabernet Sauvignon

Indulge in this rich and creamy risotto, featuring tender Arborio rice, savory portobello mushrooms, and a delicate infusion of Cabernet Sauvignon for an unforgettable dining experience.

Ingredients:

3 1/2 cups high-quality beef stock (or vegetable stock for a vegetarian option)

1 tablespoon extra-virgin olive oil

1 tablespoon unsalted butter

1 cup (approx. half of a large) yellow onion, finely diced

8 ounces fresh portobello mushrooms, thinly sliced

1 large clove garlic, minced

1 cup Arborio rice

1/3 cup red wine (such as Gallo Family Vineyards Cabernet Sauvignon)

1/2 teaspoon dried thyme (or 2 teaspoons fresh thyme leaves, finely chopped)

1/4 cup freshly grated Parmesan cheese, plus extra for serving

Salt and freshly ground black pepper, to taste

Directions:

1. In a medium saucepan, bring the beef stock to a gentle simmer over medium heat. Keep it warm throughout the cooking process.

2. In a large, heavy-bottomed saucepan or Dutch oven, heat the olive oil and butter over medium-low heat. Once the butter is melted and shimmering, add the diced onions and sliced portobello mushrooms. Sauté for 5-6 minutes, stirring occasionally, until the onions are translucent and the mushrooms begin to brown beautifully.

3. Add the minced garlic to the pan and cook for another minute until fragrant, being careful not to burn it.

4. Stir in the Arborio rice. Sauté the rice for 3-4 minutes, stirring frequently, until the edges of the grains become translucent and they smell slightly nutty. This toasting process, called “tostatura,” is crucial for developing the rice’s flavor and ensuring even cooking.

5. Pour in the red wine and dried thyme. Increase the heat slightly and cook, stirring constantly, until the wine is almost completely absorbed by the rice, about 2 minutes. This step, known as “sfumare,” adds depth and complexity.

6. Begin adding the warm stock, one ladleful (about 1/2 cup) at a time, stirring frequently. Allow most of the stock to be absorbed by the rice before adding the next ladleful. Continue this process for approximately 25-30 minutes, or until the rice is tender with a slight bite (al dente) but not mushy.

7. Once the risotto has reached your desired consistency, remove it from the heat. Stir in the freshly grated Parmesan cheese. Season with salt and freshly ground black pepper to taste. Remember to taste before adding salt, as the stock and Parmesan are already salty. Serve immediately, garnished with extra Parmesan if desired.
